- In a large bowl, stir together the flour, baking powder and salt. Rub in the butter until it is in pieces no larger than peas. Mix in water 1 tablespoon at a time just until the mixture is wet enough to form into a ball. The dough should be a firm consistency. Knead briefly.
- Heat the oil in a large heavy skillet over medium heat until hot. Break off pieces of the dough and shape into a patty - kind of like a flat biscuit. Place just enough of the dumplings in the pan so they are not crowded. Fry on each side until golden brown, about 3 minutes per side. Remove from the pan and drain on paper towels before serving.

Steps:
- Place the pork mince, green onions, hoisin sauce, soya sauce, water chestnuts and egg into a bowl.
- Stir until combined.
- Lay a wonton wrapper on a flat surface and brush a little water around the edge of the wrapper.
- Place 2 teaspoons of the pork mixture in the middle of the wrapper.
- Fold over to enclose the filling in a trangle shape and pinch the edges together to seal.
- Repeat with the remaining mixture and wonton wrappers.
- NOTE:Make sure you pinch the dumplings well.
- If air is in the wrapper, when they are deep fried, they will open up.
- Heat the oil in a pan, and deep fry the dumpling till golden brown (NOTE: Do not put too many in at once, the heat of the oil will drop too drastically).
- you can serve this with sweet chilli sauce.

- Heat canola oil in a large nonstick skillet over medium-high. Add bok choy, and cook, stirring often, until wilted and mostly dry, 6 to 8 minutes. Add ginger and garlic; cook, stirring constantly, 1 minute. Transfer bok choy mixture to a plate to cool 5 minutes. Pat the mixture dry with a paper towel. Stir together ground pork, bok choy mixture, and crushed red pepper in a medium bowl. Place a dumpling wrapper on work surface, and spoon about 1 tablespoon filling in center of wrapper. Using a pastry brush or your fingers, lightly moisten the edges of the wrapper with water. Fold the wrapper over to make a half-moon shape, pressing edges to seal. Repeat process with remaining wrappers and filling. Lightly coat air fryer basket with cooking spray. Place 6 dumplings in basket, leaving room between each; lightly spray the dumplings with cooking spray. Cook at 375°F until lightly browned, 12 minutes, turning dumplings over halfway through cooking. Repeat with remaining dumplings, keeping cooked dumplings warm. Meanwhile, stir together rice vinegar, soy sauce, sesame oil, brown sugar, and scallions in a small bowl until sugar is dissolved. To serve, place 3 dumplings on each plate with 2 teaspoons sauce.
