1 (1/4 ounce) package active dry yeast
1 cup water
1 1/2 cups all-purpose flour
1 quart vegetable oil (for frying)
2 tablespoons confectioners' sugar

Steps:

  • Heat about 3 inches of oil in a saucepan to 375°F (119°C).
  • In a large bowl, dissolve yeast in 1/2 cup warm water; set aside for 10 minutes.
  • Stir the remaining 1/2 cup water into the bowl.
  • Add flour, beating vigorously until a soft dough forms.
  • Turn the dough out onto a smooth surface, and knead with greased hands until smooth.
  • Place dough in a greased bowl, and turn to coat the surface.
  • Cover with a damp cloth.
  • Let rise in a warm place until double in bulk, about 1 to 1/1/2 hours.
  • Fry golf ball sizes of dough in batches until golden brown.
  • Drain on paper towels.
  • Sprinkle with confectioners' sugar, and eat while still hot.

This is a popular Italian dessert called Pizza Fritta or Zeppole. Actually, throughout every Region in Italian, it may have a different name. Simply, it's a pizza dough fried and then coated in sugar.

Number Of Ingredients 5

4 1/2 cups of all purpose flour or bread flour
1 pk dry yeast dissolved in 2 cups lukewarm water
1 teaspoon salt
2 tablespoons sugar
4 tablespoons olive oil

Steps:

  • Mix until dough forms a smooth dough and if still sticky add a little more flour by a tablespoon at a time. 
  • Place in a bowl, cover with a towel that has been dampened and wait until double in size as it rises. 
  • Stretch out around two tablespoons of dough into a circle poking a hole in the center like a doughnut or shape into small round balls.
  • . Place on a cookie sheet, lined with floured parchment paper. 
  • In the meantime, heat the oil in a fry pan, on medium-low heat. 
  • Place a little piece of dough, (the size of a dime) in the oil to see if it sizzles and it hot enough. 
  • Place the stretched out the dough or dough balls,  into the oil and fry on both sides until golden brown. 
  • Take out of oil when done, place on paper towels to drain oil. 
  • Sprinkle with regular white sugar, powdered sugar or flavored sugar such as cinnamon and sugar.

  • ***Important: Be careful when frying with hot oil! If you have little ones in the house, put the pot of oil on the back burner.***To make the pastry, mix together the flour, sugar, and salt. Cut in the 1/2 cup of shortening until the mixture resembles coarse crumbs. Add 1 of the beaten eggs, stirring gently with a fork, then add the buttermilk, stirring gently until it all comes together. Form into a ball and refrigerate for at least 1 hour in a plastic bag. To make the pies, roll the pastry on a floured surface into a large rectangle, about 12 inches by 24-plus inches. Make sure the dough is rolled very thin! Using a pizza cutter or a knife, trim the edges to make a very uniform rectangle. Remove the scraps along the edge.Cut the rectangle in half across the middle, then make three cuts in the other direction so that you wind up with 8 smaller rectangles. Place a heaping tablespoon of pie filling on the bottom half of each of the rectangles, leaving plenty of room around the edges. Brush the other beaten egg around the edges of the half of the rectangle with the filling. Bring the top part of the rectangle over the bottom half, pressing lightly to remove air pockets. Press the sides to seal. Dip a fork in flour and crimp the edges gently so that they're extra sealed. Heat shortening or oil in a large pot over medium high heat until the temperature reaches 350 degrees. One to three at a time (whatever you're comfortable with) lower the pies into the oil using a slotted spoon or metal spatula. Cook until golden brown, about 3 to 4 minutes, turning it halfway. Remove to a paper towel-lined pan and repeat with the other pies.Sprinkle the pies generously with sifted powdered sugar. Serve warm!

  • Pour 700ml of lukewarm water into a large bowl with 10g of sea salt. Gradually mix in a small handful of the flour to break the water and start to turn it into a batter. Mix in the yeast and leave for 2 minutes. Gradually mix in 90% of the remaining flour until you have a pliable, soft dough. Tip the remaining flour on to a clean surface and knead the dough for 20 minutes, or until smooth and elastic (or 10 minutes in a free-standing mixer with a dough hook). Place in a floured bowl, cover with a clean damp tea towel and prove for 1 hour, or until doubled in size. Press the ball out into a fat round disc, then pick it up and gently turn and stretch it to 30cm in diameter, using gravity to help you. Stretch it over the back of your fists, then place on a floured pizza paddle or board – the dough should be a little thicker around the edges. Pull it into shape and give it a jiggle so you know it’s free-moving. Working quickly and with restraint, add your chosen toppings. Quickly shunt on to your pizza stone and close the oven door to retain heat. Wait 7 or 8 minutes and it’ll be golden, crisp and ready to eat.
