Fried Day-boat Scallops Recipe | MyRecipes image

Number Of Ingredients 10

½ cup all-purpose flour
½ teaspoon salt
¼ teaspoon freshly ground pepper
1 large egg, beaten
1 tablespoon water
1 cup Japanese breadcrumbs (Panko)
20 medium sea scallops
3 cups vegetable oil
Lemon wedges
Homemade Tartar Sauce

Steps:

  • Combine flour, salt, and pepper in a bowl. Combine egg and water in a bowl. Place breadcrumbs on a shallow plate. Dredge scallops in flour mixture; dip in egg mixture, and dredge in crumbs. Cover and chill 20 minutes.
  • Pour oil in a 2-quart heavy saucepan; heat to 375º. Fry scallops, in batches, about 1 1/2 minutes or until golden. Drain on paper towels. Serve immediately with lemon wedges and Homemade Tartar Sauce.
  • Wine note: "I recommend Honig Reserve Sauvignon Blanc ($20) from California's Napa Valley, or Sancerre Blanc by Pascal Jolivet ($19) from France's Loire Valley. Here are two different styles of Sauvignon Blanc, but both cut through the oil in the tartar sauce and the scallops. This fried rice uses leftover vegetables and meat--a great way to use leftovers for a dish that can be ready in about 30 minutes. It tastes so good that my son and husband fought over the last helping!

3 tablespoons vegetable oil, divided
3 eggs, beaten
3 cups cold, cooked white rice
2 cups chopped cooked chicken
½ cup sliced celery
½ cup shredded carrot
1 cup frozen green peas, thawed
2 green onions, sliced
3 tablespoons soy sauce

Steps:

  • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Pour in the eggs; cook and stir until scrambled and firm. Remove from wok, and set aside.
  • Put remaining 2 tablespoons of oil in the wok and turn heat up to high. Stir in rice until each grain is coated with oil. Stir in chicken, celery, carrot, peas and green onions. Reduce heat to medium, cover and allow to steam for 5 minutes. Stir in scrambled eggs and soy sauce, and cook until eggs are heated through.

  • Heat a large cast iron skillet over high heat until very hot, about 2 minutes. Add 1 tablespoon oil. Beat egg with 2 teaspoons water and a large pinch salt and add to skillet. Cook, stirring to form large soft curds, about 30 seconds. Transfer to a plate.  Return skillet to high heat and add 2 tablespoons oil, the carrots, and whites of the green onions. Cook until lightly golden, about 2 minutes. Add garlic and ginger and cook, stirring, until fragrant, 1 minute. Add rice, peas, and cooked eggs to skillet. Pour in soy sauce and cook, stirring until heated through, 1 minute. Season with salt and pepper and stir in the remaining green onions.
