Fried Chicken French Bread Pizza – Duke's Mayo image

This recipe combines fried chicken, pizza and Duke's Carolina Gold BBQ sauce for a powerhouse appetizer that is sure to earn you the W at your next tailgate.

Number Of Ingredients 19

1 French Bread Loaf
Olive Oil, as needed
1 cup Duke's Carolina Gold BBQ Sauce
2 cups Shredded Cheese
2 Fried Chicken Breasts, sliced
Pickled Red Onions, as needed
Purple Cabbage Slaw (recipe below)
1 Fresh Jalapeño, optional
1 tbsp. Chopped Chives
1 tbsp. Chopped Italian Parsley
1 tbsp. Chopped Cilantro
8 cups thinly sliced Red Cabbage (1/2 large cabbage)
1 Red Bell Pepper, thinly sliced
½ cup Duke's Mayonnaise
2 tbsp. Apple Cider Vinegar
1 tbsp. Agave Nectar (or maple syrup) 
½ tsp. Celery Seeds
½ tsp. Dried Dill
Salt & pepper to taste 

Steps:

  • Preheat the oven to 425 and cut the loaf of French bread in half. Drizzle each half with olive oil and bake for 3-5 minutes or until lightly toasted.
  • Remove from the oven and spread each half with Duke's Carolina Gold BBQ Sauce.Then sprinkle with half the cheese,top with the sliced fried chicken and then theremaining half of the cheese
  • Bake for an additional 10-15 minutes, or until cheese has melted and bubbly
  • Remove from the oven and allow the pizza to cool for a few minutes. Then, cut intoslices and top with the pickled red onions, purple cabbage slaw, fresh jalapeño anda sprinkle of herbs. Enjoy immediately
  • Cut the red cabbage and bell pepper and place them in a large mixing bowl. In a separatebowl, whisk together the remaining ingredients. Pour the mayonnaise mixture over thecabbage andbell peppers, then toss to combine. Set the slaw in the refrigerator untilyou’re ready to use. Keep leftovers in the refrigerator for up to 2 days.

  • Place chicken breasts between 2 pieces of plastic wrap and pound with a meat mallet or rolling pin until 1/4" thick.  Set up dredging station: In one shallow bowl, whisk together milk and egg. In another shallow bowl, whisk together flour, cornstarch, salt, and spices. Dredge each piece of chicken in milk then in flour mixture. Repeat until all chicken is coated in breading. Place in fridge while you make gravy.  In a large skillet over medium heat, melt butter. Add flour and cook until golden and bubbling, 2 to 3 minutes. Whisk in milk and season with salt, pepper, and paprika. Bring mixture to a simmer and cook until slightly thickened, 3 to 4 minutes. (It will thicken more as it cools!) Remove from heat.  Cook chicken: In a large skillet over medium heat, heat 1/2" to 1" oil until oil is hot but not smoking. Fry each piece of chicken until golden, about 8 minutes total. Drain on a paper towel-lined plate.  Serve chicken hot with gravy.
