It’s one of our monthly meals at the Zimmern house, and its yet another brilliant way to do chicken for a crowd that includes kids. Paired with a bright citrus punch and salty capers, this chicken entrée makes everyone happy. My son starts screaming “butter chicken” and runs up and down the hallways when he comes home from school and learns what’s for dinner. I first ate this dish 30 years ago, served for a family meal one night at a restaurant in Florence where I was a stagiaire. I hadn’t seen butter during my first few weeks in Italy and almost fainted when I tasted this. - Using a meat mallet, lightly pound any thicker parts of the chicken breasts so they are of even thickness. In a shallow baking dish, mix the flour, salt and pepper. In another shallow baking dish, mixthe bread crumbs, cheese, oregano, basil and cayenne. Place the eggs in a medium bowl and beat well.
- Working with one piece of chicken at a time, dredge in the flour, then dip the chicken in the egg,letting any excess drip back into the bowl. Dredge in the bread crumbs, pressing to help the crumbsadhere. Transfer the chicken to a baking sheet.
- In a large cast-iron skillet, melt the butter over moderate heat. Add 4 chicken pieces and cook untilgolden brown and cooked through, turning halfway, 6 to 8 minutes. Transfer the breasts to a servingplatter and season with salt. Repeat with the remaining chicken.
- Add the shallots and capers to the skillet and cook, stirring, for 30 seconds. Stir in the lemon slices.Spoon some of the sauce over the chicken and serve with the remaining sauce on the side.

- Mix chopped chicken, knorr seasoning,salt and pepper.
- Marinate in refrigerator overnight.
- Stir fry chicken in high heat till golden. Set aside.
- Heat butter on low heat.
- Add in garlic, stir fry till light brown and fragrant.
- Stir in cooked chicken pieces.
- Stir well till every piece is well coated with the butter garlic mixture.
- Serve on top of piping hot rice.

Use only the original Indonesian sweet soy sauce or known as Kecap Manis. This sauce is thick, sweet and contains almost no salt. It is often used in the Indonesian kitchen, in particular for Satays. You can find it eventually in Asian shops. Though in western supermarket many varieties of "claimed to be indonesian sweet soy sauce" are available but personally I would say, those people have no idea of what kecap manis is" ;-(. Mostly those products taste really salty, worst than our salty soy sauce. These kind of product which give a bad name to people who use it in their first indonesian recipe. However experience taught me a lesson and I have found a simple trick to recognize it's originality: 1. They usually label it completely "Kecap Manis or Ketjap instead of Indonesian sweet soy sauce only".2. Just shake the bottle downside, if the sauce has a thick, almost syrupy consistency then you get it right. If it flows like water then never think a twice to even try, coz I have enough experience with them, especially in my first year living abroad and was desperately looking for my "beloved Kecap Manis" ;-)

- Place chicken breasts between 2 pieces of plastic wrap and pound with a meat mallet or rolling pin until 1/4" thick. Set up dredging station: In one shallow bowl, whisk together milk and egg. In another shallow bowl, whisk together flour, cornstarch, salt, and spices. Dredge each piece of chicken in milk then in flour mixture. Repeat until all chicken is coated in breading. Place in fridge while you make gravy. In a large skillet over medium heat, melt butter. Add flour and cook until golden and bubbling, 2 to 3 minutes. Whisk in milk and season with salt, pepper, and paprika. Bring mixture to a simmer and cook until slightly thickened, 3 to 4 minutes. (It will thicken more as it cools!) Remove from heat. Cook chicken: In a large skillet over medium heat, heat 1/2" to 1" oil until oil is hot but not smoking. Fry each piece of chicken until golden, about 8 minutes total. Drain on a paper towel-lined plate. Serve chicken hot with gravy.
