Fresh Pear Crisp Recipe: How to Make It image

Mildred Sherrer's comforting fruit crisp is a pared-down version of one her mother used to fix. "I made it healthier by using reduced-fat margarine, fresh pears instead of canned and oats for some of the flour," she explains from Fort Worth, Texas. As a finishing touch, she suggests topping it with fat-free yogurt or whipped cream.

1/2 cup all-purpose flour
1/3 cup quick-cooking oats
1/3 cup packed brown sugar
1 teaspoon ground cinnamon, divided
3 tablespoons cold reduced-fat stick margarine, cut into pieces
4 cups sliced peeled pears (about 2 pounds)
2 tablespoons sugar
1 tablespoon lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon ground ginger

Steps:

  • In a bowl, combine the flour, oats, brown sugar and 1/2 teaspoon cinnamon. Cut in margarine until coarse crumbs form; set aside., Place pears in a large bowl. Sprinkle with sugar, lemon juice, lemon zest, ginger and remaining cinnamon; toss to coat. Transfer to an 8-in. square baking dish coated with cooking spray. Sprinkle with crumb mixture. Bake at 350° for 45-50 minutes or until pears are tender.

Tender pie crust wraps around luscious pears in a dessert that bakes up on a cookie sheet--no pie pan needed!

1/2 cup sugar
3 tablespoons all-purpose flour
4 cups chopped peeled ripe pears (8 to 9 medium)
1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 teaspoon sugar
2 tablespoons sliced almonds

Steps:

  • Heat oven to 450°F. In medium bowl, mix 1/2 cup sugar and the flour. Gently stir in pears to coat.
  • Remove 1 pie crust from pouch; unroll crust into ungreased 15x10-inch pan with sides.
  • Spoon pear mixture onto center of crust to within 2 inches of edge. Carefully fold 2-inch edge of crust up over pear mixture, pleating crust slightly as necessary. Sprinkle 1 teaspoon sugar over crust edge.
  • Bake 14 to 20 minutes or until pears are tender and crust is golden brown, sprinkling almonds over pear mixture during last 5 minutes of bake time. Cool 15 minutes. Cut into wedges; serve warm.
