I think this is wonderful to start a Holiday meal with ~ also gives you time to get all the main meal put in serving dishes while everyone is busy eating their fruit !

6 - apples of your choice
3 - bananas
1 bunch(es) red or green grapes
1 cup(s) of dried cranberries
2 large oranges
- you can add any kind of fruit to this of course, whatever you have on hand.

Steps:

  • Wash all fruit thoroughly and cut in bite size pieces.
  • Arrange in 6 small cups . I sometimes sprinkle coconut over the fruit and set in fridge overnight if you can or for a few hours.

1 package (3 ounces) lemon gelatin
2 cups boiling water
1 can (6 ounces) frozen orange juice concentrate, thawed
1 can (20 ounces) pineapple chunks, undrained
1 can (15-1/4 ounces) sliced peaches, drained
1 can (11 ounces) mandarin orange segments, undrained
1 cup sliced fresh strawberries
1 cup fresh blueberries
1 cup green grapes
1 firm banana, thinly sliced

Steps:

  • In a large bowl, dissolve gelatin in water. Add orange juice concentrate; mix well. Add all of the fruit; mix well. Cover and refrigerate overnight.
