Ancho Beef Chili

Number Of Ingredients 26

1 quart beef stock
4 ancho chilis (dried poblano peppers)
seeded
2 tablespoons EVOO Extra Virgin Olive Oil
1 1/2 pounds ground sirloin
1 red onion
chopped
3 to 4 cloves garlic
finely chopped or grated
1/2 cup raisins
roughly chopped
1 tablespoon (about a palmful) ground cumin
2 teaspoons (about 2/3 of a palmful) ground coriander
1 teaspoon (about 1/3 of a palmful) ground cinnamon
Salt and ground black pepper
1/4 cup tomato paste
1/4 cup cilantro leaves
1 ripe avocado
1 cup sour cream
Zest and juice of 1 lime
1 1/2 cups shredded pepper jack cheese
for garnish and quesadilla
1/2 poblano pepper (or any mild chili)
2 flour tortillas
1/2 cup toasted pumpkin seeds
for garnish

Steps:

  • Place a medium saucepot over medium-high heat with the beef stock and ancho chilies
  • Bring the liquid to a bubble then reduce heat to medium and simmer for 15 minutes until chilies have softened
  • Transfer mixture to a blender or food processor and -- very carefully, this mixture is very hot! -- puree it until smooth
  • Reserve
  • While the chilies are simmering, place a large, heavy-bottomed pot over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Add the sirloin and cook until golden brown, 6-7 minutes
  • Add the onion, garlic, raisins and spices to the pan, season with salt and pepper, and cook until the veggies are tender, 5-6 minutes
  • Add the tomato paste to the pan and cook until deep golden brown and aromatic, about 1 minute
  • Add the blended stock-chile mixture to the pot and bring the liquids up to a bubble
  • While that's working, in a food processor combine the cilantro, avocado, sour cream, lime zest and juice and a splash of water (a couple of tablespoons)
  • Season the mixture with salt and pepper, and puree until smooth
  • Preheat a broiler or turn a gas burner on high heat and roast the poblano pepper until it is soft and its skin is charred
  • Place the roasted pepper in a bowl, cover tightly with plastic wrap, let cool and chop
  • Place a large skillet over medium heat
  • Add 1 tortilla to the pan and cook about 1 minute per side, until it starts to blister
  • Scatter 1/2 cup pepper jack cheese on top and cook until cheese is melted
  • Top with the chopped poblano pepper and a second tortilla
  • Flip quesadilla and cook for another minute, slice into quarters
  • Add the avocado mixture to the pot of chili, stirring to incorporate
  • Serve the chili garnished with toasted pumpkin seeds and a little cheese with the quesadilla alongside

Instead of using commercial chili powder to flavor this stew, we puree dried ancho chiles for a customized taste. You can prepare the chile-broth puree up to two days in advance to streamline prep for a busy night.

Yield 10 servings (serving size: 1 1/3 cups chili, 1 tablespoon sour cream, and about 1 teaspoon cilantro)

2 tablespoons olive oil, divided
2 cups chopped onion
2 teaspoons ground cumin
6 garlic cloves, minced
2 ounces stemmed dried seeded ancho chiles, torn into 2-inch pieces
4 cups fat-free, less-sodium beef broth
1 (28-ounce) can diced tomatoes, undrained
2 pounds boneless chuck roast, trimmed and cut into 2-inch cubes
Cooking spray
2?½ cups chopped green bell pepper (about 2 large)
6 cups cooked kidney beans
¾ teaspoon salt
½ teaspoon freshly ground black pepper
10 tablespoons reduced-fat sour cream
¼ cup chopped fresh cilantro
Lime wedges (optional)

Steps:

  • Heat 1 tablespoon olive oil in a large saucepan over medium heat. Add onion to pan; cook 8 minutes or until golden, stirring frequently. Add cumin, garlic, and chiles; cook 3 minutes or until chiles are soft, stirring frequently. Stir in broth and tomatoes; bring to a simmer. Cover, remove from heat, and let stand at room temperature 20 minutes.
  • Place half of chile mixture in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Blend until smooth. Pour pureed chile mixture into a large bowl. Repeat procedure with remaining chile mixture. Set aside.
  • Heat remaining 1 tablespoon oil in a large Dutch oven over medium-high heat. Add beef to pan; sauté 10 minutes or until browned on all sides. Remove beef from pan. Coat pan with cooking spray. Add bell pepper to pan, and sauté for 8 minutes or until browned. Stir in pureed chile mixture and beef; bring to a boil. Cover, reduce heat, and simmer 1 hour or until beef is tender. Add beans; cook 20 minutes. Stir in salt and black pepper. Top with sour cream and cilantro; serve with lime wedges, if desired.

  • Combine chiles and enough boiling water to cover; let stand until softened, about 15 minutes. Drain, reserving 1/3 cup of the soaking liquid. Discard stems and seeds. Process chiles, tomato paste, garlic and reserved liquid until smooth. , In a small skillet, toast chili powder, paprika and cumin over medium heat until aromatic, 3-4 minutes; remove and set aside. In a Dutch oven, cook and stir ground beef and steak seasoning over medium-high heat until beef is no longer pink, about 5 minutes; remove and drain. , Sprinkle steak cubes with 1 teaspoon each salt and pepper. In same Dutch oven, brown beef in batches in 1 tablespoon oil over medium-high heat; remove and set aside. Saute onion and poblano pepper in the remaining 1 tablespoon oil until tender, about 5 minutes. Stir in toasted spices, oregano and pepper flakes. Add the cooked meats along with stock, beer, tomatoes, beans, remaining 1 teaspoon salt and 1 teaspoon pepper, and chile paste mixture. Cook over medium heat 20 minutes; reduce heat to low. Stir in masa harina and simmer 30-45 minutes longer. Serve with desired toppings.
    Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.
