Number Of Ingredients 10

3/4 cup milk
1/4 cup water
3 egg whites (from large eggs)
3 tablespoons brown sugar, packed
1/2 teaspoon pure vanilla extract
1/8 teaspoon ground cinnamon
1/8 teaspoon sea salt
2 tablespoons unsalted butter
8 slices whole wheat bread, sliced thick
1/2 cup pure maple syrup

Steps:

  • Place milk, water & egg whites in a blender & mix well.
  • Add brown sugar, vanilla extract, cinnamon & salt, blending until smooth, then pour into a shallow bowl & set aside.
  • Put butter in a large frying pan & heat over medium heat, being careful not to burn the butter.
  • Soak each slice of bread in the egg mixture for about 30 seconds, then remove & place in the heated pan.
  • Cook for 3 to 4 minutes, or until the bottom is brown, then using a spatula, turn the each slice of bread over & cook the other side another 3 minutes.
  • Serve quickly, drizzled with syrup.

2 egg whites, beaten
1/2 cup skim milk
1 tablespoon orange juice
1/4 teaspoon vanilla
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 slices whole wheat bread
cooking spray

Steps:

  • In shallow bowl, combine egg whites, milk, orange juice, vanilla, nutmeg, & cinnamon. Beat until frothy.
  • Dip bread in egg mixture, coat both sides.
  • Coat large non-stick skillet w/ cooking spray & heat.
  • Cook bread over medium heat 2-3 minutes then turn. Cook 2-3 minutes more until golden brown on both sides.
  • Cut bread diagonally & serve with honey, molasses, or syrup.

  • Combine the flours. In a large bowl, combine 3 cups flour mixture and the yeast. Set aside. Heat water, sugar, salt and butter to 115°-120°. Add to flour and yeast. Beat on low speed for 30 seconds; increase speed to medium and beat 3 minutes longer. Stir in enough remaining flour to make a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place dough in a greased bowl, turning once to grease the top. Cover and allow to rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half and let rest 10 minutes. Roll each half into a 15x12-in. rectangle. Roll up jelly-roll style, starting with the long side. Pinch seal and turn ends under to form a smooth loaf.
