French Toast Recipe for One - Single Serving Size image

This French Toast Recipe for One is the perfect quick and easy breakfast to make on your way out the door for work or school.

Number Of Ingredients 3

2-3 Slices of Bread
1/4 cup Milk (any kind)
2 Eggs

Steps:

  • Heat up your pancake griddle to medium heat, or about 325º.
  • In a dish whisk together the egg and milk until well combined.
  • Dip the bread into the egg mixture, starting with one slide, and then flipping and dipping the other side as well. 
  • Once your bread is dipped, place it on your griddle, and repeat the same process until you've dipped all of your bread. 
  • Let each slice cook for about 1-2 minutes until flipping to the other side. The the French Toast cook for about 1-2 more minutes, until the egg is completely cooked and the French Toast is golden brown. 
  • Serve immediately with toppings of choice.

2 slices bread of choice ((I used Nature's Own 100% whole wheat bread))
1/4 overripe banana ((mashed))
1/2 tbsp unsweetened applesauce
1 tsp ground flaxseed
1/4 tsp cinnamon
2 1/2 tbsp nut milk ((I used unsweetened original almond milk))
1/2 tsp pure maple syrup
1 tbsp nut butter ((for topping, I used peanut butter))
powdered sugar ((optional, for topping))

Steps:

  • Preheat the oven to 350° F.
  • Tear/cut bread up into small square pieces.
  • In a large mixing bowl, whisk together all other ingredients.
  • Add bread to mixture and coat evenly.
  • Pour the French toast casserole mixture into a small square/rectangular pan and spread out evenly into a SINGLE layer. (If you don't do a single layer, the casserole will end up super mushy!)
  • Bake the French toast casserole for about 25 minutes, or until firm and golden brown.
  • Enjoy fresh and warm with your favorite toppings, like peanut butter, pure maple syrup, coco whip, or powdered sugar.
