FRENCH-STYLE GREEN BEANS RECIPE: HOW TO MAKE IT
These beans are one of my favorite side dishes. I serve them at our church steak dinner. A smattering of onions can be used to pep up the mild flavor of the beans.—Hope Meece, Ambia, Indiana

- In a large skillet, saute almonds in butter for 1-2 minutes or until lightly browned. Add beans and salt; cook and stir for 1-2 minutes or until heated through.

FRENCH GREEN BEANS AND SHALLOTS RECIPE - NYT COOKING
These are perfect green beans: simple and elegant. They go with almost anything, and are delicious with roast chicken.

Steps:
- Bring the water to a boil. Add the beans and cover the pot. Continue cooking the beans, covered, for 3 to 5 minutes until tender but firm. Drain and rinse under cold water.
- At serving time, heat the butter in a skillet, add the shallots and saute for about 1 minute, until the shallots start to brown.
- Add the beans, salt and pepper, and saute briefly. Sprinkle with lemon juice and serve with the chicken.

- Cook green beans in 1-inch simmering water, covered, for 6 minutes. Drain and set aside. Return skillet to stove and set burner to medium high. Add bacon and brown. When fat begins to render, add chopped onions to the pan and cook until tender with the bacon. Add cooked green beans to the pan and turn to coat in bacon drippings and onions. When the beans are hot and bacon crisp at edges and onions translucent add vinegar to the pan and season with beans with sugar. Allow the vinegar to evaporate and the sugar to combine with pan drippings, 1 to 2 minutes, then serve.
