1 x 9" pie shell
3 ounce cream cheese
3 Tbsp. cream
1 c. sugar
1 c. whipping cream
2 Tbsp. cornstarch or possibly arrow root
1 quart strawberries fresh lemon juice

Steps:

  • Bake pie shell (If frzn-7-9 min in 400Deg oven); set aside to cold. Blend cream cheese and cream till soft. Spread over cooled pie shell. Wash and hull berries. Select 1/2 best ones; slice in half; set aside. Mix sugar in rest; mash and rub through sieve. Fold in cornstarch and few n drops of lemon juice. Cook till thick, stirring constantly. Cold. Put half over crean cheese in pie pan. Arrange strawberries in the sauce, then pour the remaining puree over the berries and chill. To serve top with sweetened whip cream.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
3 pints (6 cups) fresh strawberries
1 cup sugar
3 tablespoons cornstarch
1/2 cup water
4 to 5 drops red food color, if desired
1 cup sweetened whipped cream

Steps:

  • Heat oven to 450°F. Bake pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate. Cool completely on cooling rack, about 15 minutes.
  • Meanwhile, in small bowl, crush enough strawberries to make 1 cup. In 2-quart saucepan, mix sugar and cornstarch; stir in crushed strawberries and water. Cook, stirring constantly, until mixture boils and thickens. If desired, stir in food color. Cool completely, about 30 minutes.
  • Place remaining strawberries, whole or sliced, in cooled baked shell. Pour cooked strawberry mixture evenly over berries. Refrigerate until set, about 3 hours, before serving.
  • Just before serving, top pie with sweetened whipped cream. Cover and refrigerate any remaining pie.
