French Onion Soup - The Pioneer Woman – Recipes, Cou… image

It may be slightly unusual to suggest French Onion Soup for a Valentine’s Day dinner—just as unusual, probably, as my putting Roasted Garlic Mashed Po

Provided by Ree Drummond

Categories     Valentine's Day    main dish    soup

Total Time 2 hours 20 minutes

Prep Time 20 minutes

Cook Time 2 hours

Yield 6 servings

Number Of Ingredients 9

1 stick Butter
4 whole Large (or 6 Medium) Yellow Onions, Halved Root To Tip, And Sliced Thin
1 c. (generous) Dry White Wine
4 c. Low Sodium Chicken Broth
4 c. Beef Broth
2 cloves Minced Garlic
Worcestershire Sauce
Several Thick Slices Of French Bread Or Baguette
5 oz. weight (to 7 Ounces) Gruyere Cheese, Grated

Steps:

  • Preheat oven to 400 degrees.Melt butter in a heavy soup pot or Dutch oven over medium-low heat. Add onions and cook, covered, for 20 minutes. Place soup pot into the oven with the lid slightly ajar to ensure the onions will brown. Allow onions to cook in the oven for 1 hour, stirring at least once during the cooking process so onions won’t stick and burn.Remove pot from oven and place back on stovetop over medium heat. Stir, scraping off all the brown, flavorful bits. Turn off heat and pour in wine. Turn heat back to medium. Cook wine for five minutes, allowing it to reduce. Add broths, Worcestershire Sauce and minced garlic and reduce heat to low. Simmer for 30 to 45 minutes.Butter one side of the bread slices and broil over low heat, allowing bread to brown and become crispy. When soup is ready, ladle into bowl or ramekin. Place crispy bread on top, and then sprinkle generously with grated cheese. Broil until cheese is melted and bubbly.Serve immediately.

French onion soup is one of my favorite soups, we order it all the time at our neighborhood restaurant but it's just as easy to make from scratch and so much lighter.

Categories     Dinner    Soup

Total Time 60 minutes

Prep Time 5 minutes

Cook Time 55 minutes

Yield 6

Number Of Ingredients 12

2 pounds yellow onions (sliced thin)
2 tbsp unsalted butter
2 tbsp flour ((or gluten-free flour))
1 bay leaf
1/2 tsp dried thyme
1 ounce dry sherry
1 ounce Cognac or brandy
2 ounces white wine
9 cups beef broth ((store bought or homemade))
kosher salt and freshly ground pepper (to taste)
6 slices toasted Italian bread (6 ounces) (or gluten-free bread)
6 slices reduced-fat Swiss (or your favorite cheese)

Steps:

  • In a Dutch oven, or large pot, sauté the onions with the butter over medium heat, until the onions are soft and golden, about 20 to 30 minutes, stirring often. Add a few drops of water if they get too dry. You want them caramelized but not browned.
  • Add flour, mixing well another 2-3 minutes.
  • Add thyme, bay leaf, sherry, wine and brandy, and simmer uncovered for 10 more minutes.
  • Add the beef broth, salt & pepper to taste, reduce heat.
  • Cover and simmer gently for about 20 minutes.
  • Remove bay leaf and ladle 1-1/2 cups soup into 6 oven-proof bowls.
  • Place bowls on a baking sheet.
  • Place sliced toasted bread rounds into each bowl and top bread with cheese.
  • Broil 2 to 3 minutes, until cheese melts.

  • Add the butter and oil to the liner of a 6- or 8-quart Instant Pot and set to SAUTE. Once the butter is melted, add the onions, garlic, and sugar. Stir well to coat the onions. Cover the Instant Pot with the lid and lock into place. Seal the steam release handle. Select HIGH PRESSURE and set the timer for 5 minutes. When the timer is up, manually release the pressure (unseal the steam release handle). Unlock and remove the lid, being careful of any remaining steam. Add the thyme sprigs. Set to SAUTE and cook 18-20 minutes, stirring occasionally, until onion broth is light golden in color.(You don’t want the onions to get too mushy.) Combine the flour and wine in a small bowl. Add wine mixture and cook for 1-2 minutes. Stir in the broth, Worchestershire sauce, salt, pepper, and bay leaf. Remove the bay leaf and thyme sprigs. Preheat a broiler to high heat. Spread the mustard over top of each bread slice. Spoon the soup into 6 individual ovenproof ramekins. Top each with 1 bread slice and sprinkle the cheese evenly over top. Place the ramekins on a rimmed baking sheet. Broil 1-2 minutes or until the cheese is melted and lightly browned. Garnish with thyme leaves and more black pepper, if desired.
