1 1/2 cups all-purpose flour
2 tablespoons paprika
1/2 teaspoon salt
1 egg
1 cup milk
1/2 cup butter
4 fresh lake perch fillets

Steps:

  • Mix flour, paprika, and salt together and set aside.
  • In a small bowl, blend the egg and the milk.
  • Heat butter in a large frying pan.
  • Dip perch fillets in egg wash first and then into the flour mixture.
  • Carefully place them into the hot butter in the frying pan and brown on both sides.
  • Remove from the butter and drain on a paper towel to absorb excess butter.
  • Serve immediately.

These low-cost strawberry Santas will quickly become a summertime family favourite and guaranteed to be your go-to Christmas time healthy treat.

20 medium-large strawberries, hulled for a flat base
100g Philadelphia Light cream cheese
4–6 teaspoons gluten-free icing sugar, to taste
40 mini dark-choc bits or chocolate chips

Steps:

  • 1 Cut the top third off each berry and reserve. Stand berry bases on a serving platter.
  • 2 Mix cream cheese and icing sugar until smooth and creamy.
  • 3 Pipe or spoon 1 teaspoon cream onto flat berry tops. Place reserved berry tops on top. Use the smallest piping nozzle to pipe mixture onto the tip of each strawberry ‘hat’ (pompom) and onto ‘chest’ (button).
  • 4 Use tweezers to place 2 chocolate pieces onto each cream ‘face’ (eyes). Refrigerate until ready to serve.

  • Preheat the oven to 450 degrees.Melt the butter and skim off the foam. Add garlic, seasoned salt, chili powder, and black pepper. Stir with a fork.In a large bowl, toss the sweet potatoes in the butter/seasoning mixture. Arrange on two baking sheets and bake in the oven for 15 to 17 minutes, shaking the pans halfway through, until the fries are sizzling (watch so that the edges don't burn). Remove from the oven and allow to sit on the pan for 5 minutes. Sprinkle generously with salt!Mix the mayonnaise with the ketchup (or Sriracha). Serve fries with the dipping sauce!Note: Sweet potatoes will not be overly crisp, but they should be firm...and, of course, scrumptious!
