versatile scone recipe from www.joyofbaking.com by Stephanie Jaworski A coworker brought these, yum! She stated that they do freeze well.

Number Of Ingredients 8

2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/8 teaspoon salt
1/3 cup chilled unsalted butter
1 egg, beaten
1 teaspoon vanilla
1/2 cup heavy whipping cream

Steps:

  • In a large bowl, combine flour, sugar, baking powder and salt.
  • Cut the butter into small pieces and blend in the flour mixture with a pastry blender.
  • The mixture should look like coarse crumbs.
  • In a small measuring cup combine the whipping cream, beaten egg and vanilla.
  • Add this mixture to the flour mixture.
  • Stir until just combined.
  • Do not overmix this mixture.
  • Knead dough gently on a lightly floured surface.
  • Roll or pat the dough into a circle that is 7 inches round and about 3/4 to 1 inch thick.
  • Cut this circle into 8 triangular sections.
  • Place the scones on a parchment paper lined baking sheet or else a lightly greased pan.
  • Make mixture of one well-beaten egg with 1 TBS heavy cream.
  • Brush the scones with this mixture.
  • Bake at 375 degrees for approximately 15 minutes or until lightly browned.
  • These scones freeze very well.
  • This recipe is very good as is but there are ways to jazz it up a little.
  • When adding fruit or chocolate chips do so just before adding the cream mixture: You could add 1/3 cup dried cherries, or 1/3 cup miniature chocolate chips, or 1/2 cup raisins, or 2 tsp grated lemon peel and 1 TBS poppy seeds and 1 tsp almond extract (instead of vanilla), or 2 tsp grated orange peel and 1 tsp orange liquor (instead of vanilla).

1 lb self raising flour
3 ounces caster sugar
4 ounces butter or 4 ounces margarine, cubed
8 fluid ounces milk
lemon juice
1 beaten egg, for glaze

Steps:

  • Preheat oven to 200°C/400°F.
  • Rub the flour, fat and sugar to breadcrumbs.
  • Add the raisins and mix inches.
  • Heat up the milk very slightly with some lemon juice to curdle it.
  • With a knife make a well in the centre of the flour and add the liquid.
  • keep stirring with the knife until all incorporated into a dough.
  • Lay some flour on your board and tilt out the mixture.
  • The key to scone making is not to work the dough too much.

  • Not a correction but just wanted to add that they can be made savoury too, by leaving out most of the sugar and adding grated cheese to the scones and also some on top and also mixed herbs in the mixture -- good with soup.

  • Just pat the dough to, I think about 1/2 inch.
  • This amount of dough makes 11 medium scones.
  • Don't flatten the dough too much.
  • Then just lightly bring the bits together and cut out again.
  • They should be slightly rustic.
  • Lay them on a tray, not touching one another and egg wash.
  • Bake centre oven for about 10/15 mins, really depends on your oven.
  • The centre and bottoms should be cooked as well as the top.
  • These are very good eaten warm but if left for a few days can be toasted.

  • Preheat oven to 350 degrees.Sift together flour, sugar, baking powder, and salt.Mix cream with egg, lemon zest and rosemary and allow to sit for 10 to 15 minutes to steep.Use a pastry cutter or two knives to cut the butter pieces into the flour. Keep going until mixture resembles crumbs. Mix wet mixture with flour mixture; stir gently with a fork until combined. Mix should be crumbly, but if it's too crumbly to work with, splash in a small amount of heavy cream.Turn dough onto a floured surface and lightly press it together until it forms a rough rectangle. Use a rolling pin to roll into a rectangle about 1/2 inch to 3/4 inch thick. Use your hands to help with the forming if necessary. Add butter pieces and use a pastry cutter to work the butter and dry ingredients together until the mixture resembles coarse crumbs. Stir in the chopped pecans.Whisk together the cream, egg, and 1 teaspoon maple extract. Pour into flour mixture, stirring gently, until it all comes together.
