10 tablespoons spaghetti sauce
1 small onion
1/4 bell pepper
1 hoagie roll

Steps:

  • Fry, boil or grill your sausage.
  • Sauté onion and bell pepper with a dash of pepper flakes.
  • ASSEMBLY----------.
  • Place sausage on bun.
  • Place sauté mixture on top.
  • Place warm sauce on top. (warm for twenty seconds in microwave).
  • Enjoy!

This is a spicy sausage mix that can be stuffed into casings, made into patties, or just fried and crumbled for use on pizza or in other dishes. It is for one pound of ground pork (I like the pork to have about 15% fat in it) and can be multiplied as you see fit.

1 lb ground pork
1/4 cup water
2 teaspoons fennel seeds
1/8 teaspoon caraway seed
2 teaspoons kosher salt
1 teaspoon ground pepper
1/4 teaspoon ground coriander
1/2 teaspoon dry crushed red pepper
1/8 teaspoon oregano
1/8 teaspoon garlic powder
1/2 teaspoon sugar

Steps:

  • Mix all dry ingredients together.
  • Spread ground pork out in a shallow pan. Sprinkle with the spice mixture. Drizzle with water.
  • Mix as thoroughly as possible (most important step).
  • Cover and refrigerate 24 hours. Mix again.
  • Stuff into casings, make into patties, cook or freeze. I like to just fry it up and use it for a topping on pizza. Use your imagination - it tastes great in lots of dishes. Cooking time is refrigeration time.

  • Preheat oven to 400°F. In a large baking dish, toss grape tomatoes, potatoes, bell peppers, and red onion with one tablespoon olive oil and chopped garlic. Mix well until incorporated and salt and pepper to taste. Place the sausage links on top of the vegetables. Place sprigs of thyme throughout the dish. Cover with foil and bake for 90 minutes. Remove tinfoil from baking dish, mix vegetables around, and bake for an additional 30 minutes until sausage is golden brown. (*You may need to turn the sausage to prevent from burning). Serve immediately.
