ROBERT'S BOSTON BUTT ROAST RECIPE - FOOD.COM
I enjoy watching Emeril Live on Food Network so I checked out his Emeril's Southwest Seasoning and used it on chicken and pork chops. Along came a Boston Butt, so I had to try it. It worked out great on a slow cooked roast.

Steps:
- Preheat oven to 250 degrees F.
- Place roast in deep roasting pan and salt and pepper to taste.
- Rub entire roast with worcestershire sauce, then with Emeril's.
- Southwest Seasoning.
- Cover tightly with foil and bake for 7 to 8 hours.
- Bone should pull out easily when done.
- Cool pan drippings and skim off fat. Pour drippings into saucepan.
- Place on stove on medium heat. Add corn starch mixed with cold water.
- Cook until thickened. Makes great gravy.

I had a Boston Butt Pork Roast and I didn't want to use a crockpot and don't have a grill, so I came up with this method.And thought it came out pretty well.As with all my recipes, please adjust the seasonings according to your tastes. Submitted on August 31st.2010.

Steps:
- Preheat oven to 250 degrees.
- In a small bowl mix together all dry ingredients,( at this time, taste and see if seasonings need to be adjusted ) set aside.
- Line a small roasting pan with foil ( makes clean up easier ).
- Rub roast all over with brown sugar mixture, then place roast,onto another piece of foil, and wrap tightly.if needed use another piece of foil to make sure no liquids come out.
- Bake for 4 or 5 hours, then remove foil from top of roast to drain excess liquid.
- Turn temp up to 350 degrees.
- Top with BBQ Sauce and bake for another 1 1/2 hours if roast is getting too dark cover with foil and continue baking.

I had a 4 1/2 lb. Boston Butt and didn't want to use it for the usual pulled or BBQ pork. So, this is what I came up with.This is a very plain pork recipe, so if you feel like adding other seasonings or BBQ sauce after cooking go right ahead.The size of the Boston Butt will determine how long the cooking time is.In the case of this recipe it was 8 hours on low.The amount of seasonings you will use is up to you.As I said this is a very plain recipe, and you can use the meat as starting point for all sorts of other dishes. - "For best results make the dry-rub a day ahead by mixing all spices together. Rub yellow mustard into all crevices of the meat and rub on a generous amount of the dry- rub. Place in plastic wrap and refrigerate overnight and up to 48 hours .This step really makes a difference! Next day pull out pork and let sit room temperature for one to two hours. Meanwhile place oven temp to 325 degrees. On stove top in large pan add 2 tbsp vegetable oil and sear pork on all sides. Now wrap tightly inside aluminum foil (I do this twice) and place on a baking sheet. Put into oven and start your time. Depending on the size of your pork shoulder time will vary, however after 3 hours start checking the temperature with a thermometer, your looking for 165 degrees at the deepest part of the meat. At this point take out your pork shoulder and cover it again with foil and let rest for 20-30 minutes till your thermometer reads 175 degrees. Pull apart with two forks and enjoy your labor of love either plain or with any sauce of your choice. Here's my recipe for (Carolina vinegar based BBQ sauce). 1cup white vinegar, 1cup apple cider vinegar,1/2cup brown sugar packed, 1tsp cayenne pepper, 1tbsp red pepper flakes, 1tsp salt, 1tsp ground pepper....bring to a simmer and let sit. I also like to make this a day ahead to let the flavors meld together."
