FOIL-WRAPPED BABY BACK RIBS | PORK RECIPES | WEBER GRILLS

Foil-Wrapped Baby Back Ribs | Pork Recipes | Weber Grills image

If you want to cook ribs in 1-1/4 hours as opposed to 3 to 4 hours, use this "foil-wrapped" technique.

Provided by Jamie Purviance

Categories     Pork

Total Time 1 hours 30 minutes

Prep Time 15 minutes

Cook Time 1 hours 15 minutes

Yield 4 servings

Number Of Ingredients 7

1 tablespoon kosher salt
2 teaspoons paprika
2 teaspoons granulated garlic
2 teaspoons dried thyme
½ teaspoon freshly ground black pepper
2 racks baby back ribs, each about 2 pounds
1 cup/240 milliliters store-bought barbecue sauce

Steps:

  • Soak the wood chips in water for at least 30 minutes.
  • Prepare the grill for direct cooking over medium heat (350° to 450°F).
  • In a small bowl mix the rub ingredients.
  • Using a dull dinner knife, slide the tip under the membrane covering the back of each rack of ribs. Lift and loosen the membrane until it breaks, then grab a corner of it with a paper towel and pull it off.
  • Season each rack evenly with the rub. Using four 18-by-24-inch sheets of heavy-duty aluminum foil, double wrap each rack in its own packet.
  • Brush the cooking grates clean. Place the ribs on the grill over direct medium heat , close the lid, and cook for 1 hour, occasionally turning the packets over for even cooking, making sure not to pierce the foil.
  • Remove the packets from the grill and let rest for about 10 minutes. Carefully open the foil packets, remove the ribs, and discard the rendered fat and foil.
  • Drain and add the wood chips to the charcoal or to the smoker box of a gas grill, following manufacturer’s instructions, and close the lid. When the wood begins to smoke, return the racks to the grill, bone side down. Grill over direct medium heat, with the lid closed, until they are sizzling and lightly charred, 10 to 12 minutes, turning and basting once or twice with the sauce. Remove from the grill and let rest for about 5 minutes. Cut into individual ribs and serve warm with any remaining sauce.

FOIL BAKED ASPARAGUS RECIPE - FOOD.COM - RECIPES, FOOD ...

Foil Baked Asparagus Recipe - Food.com - Recipes, Food ... image

A very simple method of cooking asparagus, where they are wrapped in foil and baked, with nothing but a little butter and salt. So easy and yet so delicious!! My 2 1/2 year old daughter liked it too! I've only tried this once and I followed the recipe exactly as set out, but I'd like to try it again, perhaps putting a few sprigs of herbs in with it. You could also try herb butter instead of ordinary butter. You can omit the salt if you like. If you are making larger quantities you might need to make more than one "parcel". You could even wrap each portion separately and serve them in the foil wrappers - I ate mine straight out of the foil, and I think it made them even nicer as they're still steaming hot and in their cooking juices, and you can keep all that flavour and aroma trapped in the parcel until you're ready to eat it! Would make a really good starter served like this. Although I suppose it depends what kind of guests you've got - if they're used to silver platters they might not be so impressed with silver foil!! But I would be! :)

Total Time 35 minutes

Prep Time 5 minutes

Cook Time 30 minutes

Yield 2 serving(s)

Number Of Ingredients 3

200 g asparagus
2 tablespoons butter (approx)
1 pinch salt (optional)

Steps:

  • Preheat oven to 180 C (360 F).
  • Prepare asparagus by snapping the lower "woody" part of the stem off (if it snaps cleanly you've got the right place; if it is difficult to break try higher up!), and peel the lower section if they're a bit old or thick.
  • Tear off a large enough piece of aluminium foil to wrap around the bunch of asparagus securely, and place asparagus in foil.
  • Dot with butter and sprinkle lightly with salt.
  • Wrap securely, and then wrap an extra strip of foil around the tip end to protect it.
  • Bake in oven for 25-35 mins, depending on the thickness and age of the asparagus (Mine were done in 30 and I'd say they were fairly average sized).
  • Try to wait until you're ready to serve before you unwrap them, or better still, serve them still wrapped in the foil.
