Grilled Seafood Boil Foil Packets | Ready Set Eat image

A traditional seafood boil recipe made easy on the grill-- seasoned shrimp, scallops and andouille sausage combined with vegetables and cooked with beer

Number Of Ingredients 14

2 tablespoons salted butter, softened
2 teaspoons grated lemon peel
3/4 pound peeled and deveined shrimp, thawed if frozen, patted dry
1/3 pound bay scallops, foot removed, thawed if frozen, patted dry
1 tablespoon canola oil
3/4 teaspoon seafood seasoning blend (such as Old Bay®)
1/2 teaspoon garlic powder
1/4 teaspoon ground red pepper
PAM® Original No-Stick Cooking Spray
2 medium ears fresh sweet corn, husks removed, halved crosswise
2-1/2 cups Alexia® Oven Reds with Olive Oil, Parmesan and Roasted Garlic (2-1/2 cups = about 1/2 bag)
2 links andouille sausage, sliced (2 links = 6 ounces)
1 cup lager beer
2 tablespoons chopped fresh Italian (flat-leaf) parsley

Steps:

  • Preheat grill for medium-high heat. Combine butter and lemon peel in small bowl; set aside. Combine shrimp, scallops, oil, seafood seasoning, garlic powder and cayenne pepper in second bowl; toss to coat.
  • Place four 18x12-inch pieces of heavy aluminum foil on counter. Spray each with cooking spray. Divide and evenly place corn and potatoes on each piece of foil. Top each with some seafood mixture and andouille slices. Fold edges of foil upward; pour 1/4 cup beer into each packet. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  • Place packets on grate; cover. Grill 15 to 20 minutes or until seafood is cooked through (145°F) and vegetables are tender. Carefully open packets. Divide lemon butter evenly and place on each piece of corn. Sprinkle each with parsley.

Number Of Ingredients 12

1 1/2 lbs Rib-eye steak* ((can also use T-bone, Filet Mignon or strip steak))
sea salt and freshly ground black pepper (to taste)
1 Tablespoon Worcestershire sauce
1/2 cup sliced mushrooms
1 small yellow onion (cut into 1 1/2" chunks)
2 cups potatoes (cut into 1" chunks (I used Russet but baby Yukon or baby red potatoes would work as well))
1 Tablespoon olive oil
2 Tablespoons unsalted butter (melted)
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
freshly chopped parsley (for topping)

Steps:

  • Preheat grill to medium-high or oven to 450°F.
  • Season both sides of the steak with salt, pepper and Worcestershire sauce. *Cut into chunks according to desired doneness:For Medium Rare: Cut steak into 3.5 - 4 inch chunks For Medium: Cut steak into 3 inch chunks For Medium Well: Cut steak into 2 inch chunks
  • Add the mushrooms, onions, and potatoes to a large bowl. Season with salt, black pepper then toss to coat well. Add the steak, olive oil, butter, garlic powder, thyme, and oregano to the bowl then toss to coat well.
  • Cut four 18 x 12 inch squares of foil* and divide mixture evenly among each packet.
  • Fold the foil over the steak and seal to close off the packets.
