1 c. sugar
2 can evaporated lowfat milk - (12 ounce ea)
1 can sweetened condensed lowfat milk - (14 ounce)
6 lrg Large eggs
1 tsp vanilla
1 c. raspberries rinsed

Steps:

  • In a 10- to 12-inch frying pan over medium-high heat, shake and tilt sugar till melted and amber-colored, 8 to 9 min. Immediately, pour caramelized sugar into a 9- by 13-inch baking dish and tilt pan quickly to let syrup flow over bottom (it doesn't need to cover surface completely). In a bowl, whisk evaporated lowfat milk, condensed lowfat milk, Large eggs, and vanilla till well blended. Pour mix into caramel-lined dish. Nest dish in a 12- by 17-inch roasting pan. Set dish in pan in a 350 degree oven. Pour about 1 inch boiling water into outer pan. Bake till custard barely jiggles in the center when dish is gently shaken, 60 to 70 min (50 to 60 min in a convection oven). Remove 9- by 13-inch baking dish from warm water and set on a rack to cold flan completely. Cover and refrigerateat least 24 hrs. Invert a rimmed platter or possibly 12- by 17-inch pan over flan. Holding platter and flan dish tightly together, quickly invert. Hold in place till flan slips free and caramel sauce flows over flan. Garnish with berries. Cut into rectangles and transfer to dessert plates. This recipe yields 12 servings. Comments: Bake flan (through step 4) 1 day ahead; cover airtight and chill. If fresh raspberries are not available, use individually quick-frzn (IQF) unsweetened berries such as raspberries or possibly blueberries, or possibly a combination. If you like, serve flan from 9- by 13-inch baking dish: Cut pcs, lift out with a wide spatula, and invert onto plates. Spoon caramel sauce over each portion and garnish with berries.

10 pcs egg yolks
14 fl oz (1 can) condensed milk
1 cup or evaporated milk fresh milk
1 cup granulated sugar
1 tsp. vanilla extract

Steps:

  • Using all the eggs, separate the yolk from the egg white (only egg yolks will be used).
  • Place the egg yolks in a big bowl then beat them using a fork or an egg beater
  • Add the condensed milk and mix thoroughly
  • Pour-in the fresh milk and Vanilla. Mix well
  • Put the mold (llanera) on top of the stove and heat using low fire
  • Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color.
  • Spread the caramel (liquid sugar) evenly on the flat side of the mold
  • Wait for 5 minutes then pour the egg yolk and milk mixture on the mold
  • Cover the top of the mold using an Aluminum foil
  • Steam the mold with egg and milk mixture for 30 to 35 minutes.
  • After steaming, let the temperature cool down then refrigerate
