A beautifully creamy South-Indian curry, packed full of flavour and spice.

Yield 6 to 8

Number Of Ingredients 13

6 shallots
4 cloves of garlic
2.5 cm piece of ginger
1 fresh green chilli
750 g firm white fish from sustainable sources
groundnut oil
1 teaspoon mustard seeds
20 curry leaves
1 tablespoon chilli powder
1 teaspoon turmeric
1 x 400 g tin of light coconut milk
1 x 400 g tin of quality chopped tomatoes
a few sprigs of fresh coriander

Steps:

    1. Peel and finely slice the shallots, garlic and ginger. Trim and finely slice the chilli. Cut the fish into chunks.
    2. Heat a lug of groundnut oil in a large pan, add the mustard seeds and curry leaves and cook until the seeds start to pop.
    3. Add the shallot, garlic, ginger and chilli, and cook on a medium heat for 5 minutes, or until softened.
    4. Mix the chilli powder and turmeric together with a splash of water, and stir into the pan. Fry for 1 minute, then add the fish, coconut milk and tomatoes.
    5. Season, bring to the boil, then simmer for 20 minutes, or until the fish is cooked and the sauce has reduced.
    6. Pick, chop and scatter over the coriander leaves. Delicious served with basmati rice and warm naan bread.

We like to serve these Fish Tacos with Cabbage Slaw in the sturdy texture of corn tortillas, but you can use flour tortillas. Since the recipe makes more slaw than necessary for the tacos, serve the extra on the side.

Yield 4 servings (serving size: 2 tacos and about 1 cup cabbage mixture)

Number Of Ingredients 10

4 cups very thinly presliced green cabbage
1 cup chopped plum tomatoes
⅓ cup thinly sliced green onions
¼ cup chopped fresh cilantro
2 tablespoons fresh lime juice
5 teaspoons extravirgin olive oil, divided
½ teaspoon salt, divided
1 pound tilapia fillets
1 teaspoon chili powder
8 (6-inch) corn tortillas

Steps:

  • Combine first 4 ingredients in a large bowl. Add juice, 1 tablespoon oil, and 1/4 teaspoon salt; toss well to combine.
  • Heat remaining 2 teaspoons oil in a large nonstick skillet over medium-high heat. Sprinkle fish evenly with chili powder and remaining 1/4 teaspoon salt. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Remove from heat, and cut fish into bite-sized pieces.
  • Warm tortillas according to package directions. Spoon about 1/4 cup cabbage mixture down the center of each tortilla. Divide fish evenly among tortillas; fold in half. Serve tacos with remaining cabbage mixture.
