MOROCCAN TILAPIA SOUP - THE HEALTHY FISH



Moroccan Tilapia Soup - The Healthy Fish image

2 tbsp olive oil
1 yellow onion (sliced thin)
1 ½ cups carrot (cut into matchsticks)
1 ½ tsp cumin
1 tsp cinnamon
1 tsp smoked paprika
1 tsp sea salt
3 cloves garlic (minced)
1 small to medium head cauliflower (cut into florets)
28 oz fire roasted crushed tomatoes
4 cups chicken stock
3 fresh Regal Springs Tilapia fillets (cut into 1” strips)
Greek yogurt
Cilantro

Steps:

  • Heat a large stock pot over medium heat. Once hot, add olive oil and yellow onion. Saute for 2–3 minutes.
  • Once the onion starts to become translucent, add in carrots, cumin, paprika, cinnamon, salt and garlic. Saute for another 1–2 minutes.
  • Add in cauliflower florets, crushed tomatoes and chicken stock. Increase heat to high and bring to a boil.
  • Once boiling, reduce heat to low and cover, simmer for 15 minutes.
  • After 15 minutes, remove lid, add in Tilapia strips, then stir and let cook for 5–7 minutes or just until the Tilapia is cooked through.
  • Serve immediately topped with a dollop of Greek yogurt and cilantro.

1 cup jasmine rice
2 cups water
Zest and juice of 1 lemon
4 cups reduced-sodium chicken broth, or vegetable broth
1 pound tilapia fillets, or other firm white fish (see Tip)
4 cups bite-size pieces arugula, or watercress (about 1 bunch), tough stems removed
1 cup finely shredded carrots
¼ cup very thinly sliced fresh mint
2 scallions, finely chopped

Steps:

  • Combine rice and water in a medium saucepan. Bring to a simmer over medium heat; cover and cook until the water is absorbed, about 20 minutes. Stir in lemon zest and juice.
  • Meanwhile, bring broth to a simmer in another medium saucepan over medium-high heat. Reduce the heat so the broth remains steaming, but not simmering. Add fish and cook until just tender, about 5 minutes. Remove and break into bite-size chunks.
  • Divide the lemony rice among 4 bowls. Top with equal portions of the fish, arugula (or watercress), carrot, mint and scallions. Ladle 1 cup of the warm broth into each bowl and serve.

I just re-found this recipe while going through my Mom's old file box. She used to make this quite often when I was a child. She probably found the recipe in the newspaper. This is a quick, easy and delicious recipe using ingredients that I usually have on hand. It's also very versatile as for substituting....I didn't have fresh parsley so I used dried. I only had 1 can of diced tomatoes so I used the can of Ro-tel, which I did have on hand. Also, use any combo of fish/shellfish...tonight I made this using 2 small tilapia fillets and 1/2 lb. of bay scallops, it was a nice combo. This is a great cold weather soup....it will give you the warm fuzzies. I served it with freshly baked dinner rolls, though a crusty bread would be nice too.
