These crisp, tender buttery cut-out cookies can be decorated in inviting fish shapes.

Cookie
1 cup Land O Lakes® Butter softened
1 cup sugar
1 large Land O Lakes® Egg
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder
Glaze
5 cups powdered sugar
1/4 cup water
2 tablespoons Land O Lakes® Butter softened
Food color, if desired
Decorations
Decorator sugars, edible sprinkles, etc.

Steps:

  • Combine 1 cup butter, sugar, egg and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour and baking powder; beat at low speed until well mixed.
  • Divide dough into thirds. Shape each third into ball. Wrap each in plastic food wrap; flatten to 1/2 inch. Refrigerate 1 hour or until firm.
  • Heat oven to 400°F.
  • Roll out dough, one-third at a time, on lightly floured surface (keeping remaining dough refrigerated) to 1/8-inch thickness. Cut with 3-inch fish-shaped cookie cutter. Place 1 inch apart onto ungreased cookie sheets. Bake 6-10 minutes or until edges are lightly browned. Let stand 1 minute; remove from cookie sheets. Cool completely.
  • Combine powdered sugar, water and 2 tablespoons butter in bowl. Beat at medium speed, adding additional water, if necessary, for desired glazing consistency. Tint with food color, if desired.
  • Glaze cooled cookies; decorate as desired. Let stand until set.

1/2 cup mayonnaise
1/4 cup prepared ranch salad dressing
2 tablespoons sweet pickle relish
1/4 teaspoon garlic powder
12 slices white bread
6 slices process American cheese
6 lettuce leaves

Steps:

  • Prepare fish fillets according to package directions. Meanwhile, in a small bowl, combine the mayonnaise, ranch dressing, relish and garlic powder; spread over six slices of bread. Place two fillets on each slice. , Top with cheese, lettuce and remaining bread. Using a 3-1/2-in. fish-shaped cookie cutter, cut two fish shapes from each sandwich. Serve immediately.
