3/4 teaspoon salt
1-2 tablespoons Shaoxing rice wine or medium-dry sherry
4 tablespoons Sichuanese chili bean paste
1 tablespoon finely chopped garlic
1 1/3 cup chicken stock
1 teaspoon white sugar
1-2 teaspoons light soy sauce
1 1/4 teaspoon cornstarch dissolved in 1 teaspoon cold water
1/2 teaspoon Chinkiang or black Chinese vinegar
3 scallions, green parts only, finely sliced
