200 g noodle
4 tsp Maggi concentrated chicken stock
700ml water
1-2 tsp corn flour
1-2 tsp cooking oil
2 tsp garlic
Salt and pepper to taste
6-8 fishballs / Fuzhou fishballs
Fried shallots and/or chives for garnish

Steps:

  • Cook your noodles of choice according to the package directions. Drain and set aside.
  • To make the soup base, mix chicken stock,water and corn flour in a large bowl. Set aside.
  • Heat cooking oil in a medium pot. Fry garlic over medium heat for a minute or two till mostly brown. Pour in the chicken stock soup base. Add salt and pepper to taste.
  • Bring to the boil. Throw the fishballs into the soup and cook for two minutes. Then add the cai xin and cook for another two minutes.
  • Remove soup from heat. Spoon fishballs and veggie over the noodles. Then pour the soup over the whole lot. Garnish with fried shallots and/or chives.

1 pound white fish fillets
2 tablespoons olive oil
salt and ground black pepper to taste
2?½ cups mashed potatoes
½ cup chopped green onions
1 large egg, well beaten
2 tablespoons all-purpose flour
1 pinch Creole seasoning, or to taste
1 cup panko bread crumbs, or as needed
1 cup vegetable oil for frying, or as needed

Steps:

  • Season fish with salt and pepper. Heat olive oil in a skillet over medium heat. Cook fish in the hot skillet until almost completely cooked through, turning as needed, 7 to 10 minutes. Remove from heat.
  • Transfer fish to a bowl and flake with a fork. Add mashed potatoes, green onions, egg, flour, and Creole seasoning. Mix thoroughly. Add panko, a tablespoon at a time, as needed to firm up balls. Form mixture into small balls or patties.
  • Heat vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Deep-fry fish balls, working in batches, in the hot oil until golden brown, about 5 minutes per batch.

  • To Prep Add the minced pork, light soy sauce, white pepper powder, corn flour, and sesame oil in a small bowl and allow to marinate for at least 10 mins in the fridge. To Cook Bring soup stock to a simmer, and add fish balls and fish dumplings. Cook for a few mins until the fish balls float to the surface. Keep the soup bubbling at a low heat. Add Chinese fish sauce, black vinegar, hot stock, sambal tumis, crispy lard pieces, and lard oil in a serving bowl. Stir and mix it well. Add one ladle of hot stock over the bowl of marinaded pork. Set them aside. Meanwhile, bring another pot of water to boil. Cook Mee Pok for about 30-45 secs until just cooked. Rinse the noodles in tap water for a few secs, drain and add to serving bowl. Blanch fish cake slices and bean sprouts in a slotted ladle for 30 secs. Drain and transfer to serving bowl. Put the bowl of marinated pork in hot stock back to the soup pot. Cook the pork for a few secs and separate the pork to smaller pieces with wooden chopsticks. Drain the pork and top the serving bowl. Garnish with lettuce and spring onions. Ladle a small bowl of soup to go with the Mee Pok. Serve with a sauce of sliced chilli padi in soy sauce. Mix the noodles thoroughly with the sauce before eating.
