Growing up as a young girl, my best friend's mom would make these. She was born in Finland and came over to America as a young girl and was raised in Ishpeming, Michigan. The family migrated out west after she married and had her own family. Her kitchen always had the most wonderful aroma of good things baking. Her pasties and braided bread were the best!

Yield 8-10 pasties

Number Of Ingredients 14

4 1/2 cups flour
1 cup shortening
1 1/4 cups ice water
1 teaspoon salt
5 1/2 cups thinly sliced potatoes
2 carrots, shredded
1 onion, diced
1/2 cup diced rutabaga
1 1/2 lbs lean ground beef
1/2 lb ground lean pork
1 tablespoon salt
1 teaspoon ground black pepper
1 beef bouillon cube (or 1 Tablespoon beef base)
1/2 cup hot water

Steps:

  • With a wire whisk, mix together flour and salt in a large bowl.
  • Cut in shortening.
  • Make a well in the center of the mixture and quickly stir in the ice cold water.
  • Form dough into a ball; Set aside.
  • Dissolve the bouillon cube or beef base in the hot water.
  • Combine potatoes, carrots, onion, rutabaga, ground beef,pork, salt, pepper,and bouillon.
  • Roll out pastry dough into 6 x 8 inch rectangles.
  • Place about 1 1/2 cups of filling in the center of each rectangle.
  • Bring 6 inch sides together, and seal.
  • Cut a slit in the top of each pasty to vent. Place on dull, not black, cokkie sheet.
  • Bake in 425 degree oven for 45 minutes.

This recipe is passed down from fathers family. They migrated from Finland to upper Mich. Other Finn's to Minn.& NO.Dakota as did people from all over Europe. The pastie recipe was originally brought over by the Cornish people, and quickly caught on with the miners working in the copper mines in the upper Mich area that was booming there a century ago! Naturally some people call them Cornish Pasties. Probably rightfully so. Take the time to bake a batch, you will not be disappointed. Your home will smell so good.... Do your self a favor and make a double batch. They go fast, or freeze them. My recipe was featured in Asuris Ins. News Letter in 2010 * NOTE: Picture is part of my fathers family.His mom and dad ETAPA, and my dad Andy, is the little boy. Also his sister, and 2 of his brothers. Taken in the Upper Mi. probably about 1908 ??

  • NOTE: I was told when the miners went down into the mines, they would put the pastie on there head, under the cap....to keep the pastie warm! Miners wives would crimp the pastie with a ridge on the top, so when they ate with dirty hands..they would hold the pastie by the crimp which helped to keep the pastie cleaner. Then they would throw away the crimp !

When Cornish miners migrated to Michigan's Upper Peninsula in the 1800's, they brought with them their beloved national dish: the pasty. The Finnish miners that followed adopted these meat pies as their own (easily transportable for long subterranean days!), and the pasty became such a large part of the regional culture that there's an annual pasty festival in early July. In this recipe, beef, rutabaga, carrots, onions and potatoes are essentially steamed within the crimped, D-shaped dough pocket that's slit to allow just enough steam to escape.

  • Cut the dough into 6 even pieces, about 5 ounces each, and form into balls. Make sure the dough is cold for easier handling. Flour a work surface and roll out each ball of dough into an 8-inch circle. Evenly divide the filling (about 3/4 cup per pastie) on one half of each dough circle. Fold the dough over to cover the mixture and crimp the edges using a fork. Slice 3 small slits on top of each pocket. This prevents steam from building up and splitting the dough. Brush the pasties with the egg and bake on the prepared baking sheet until the crust is golden brown and flaky, about 1 hour 15 minutes. Serve with ketchup.
