3 red onions
400 g lamb neck fillet
6 teaspoons mint sauce
4 teaspoons umami paste
500 g potatoes

Steps:

    1. Preheat the oven to 170ºC/325ºF/gas 3.
    2. Peel and roughly chop the onions, dice the lamb into 3cm chunks, then divide both between four 15cm ovenproof bowls, placing the bowls on a large oven tray.
    3. Add 1 teaspoon each of mint sauce and umami paste to each of the bowls, followed by 150ml of water and a little pinch of sea salt and black pepper. Stir well.
    4. Quickly scrub the potatoes and rattle them through the thick slicer attachment of a food processor so they’re just under ½cm thick. Divide between the bowls, overlapping them slightly to cover.
    5. Press down on the potato layer to compact everything, then cover with tin foil and bake for 2 hours, removing the foil for the last 30 minutes.
    6. Spoon over the remaining mint sauce, and tuck in.

This lamb recipe is the perfect thing to try for Sunday lunch.

3 big cloves of garlic, crushed to a paste with a little salt
4 tbsp. extra virgin olive oil
Sea salt and freshly ground black pepper
1 lemon sliced
1 1/2 tsp. chilli flakes
2 tbsp. drained capers
2 tbsp. pine nuts
2 lamb neck fillets 

Steps:

  • Preheat the oven to 220°C/425°F/gas mark 7. Rub the fillets with the garlic paste and three tablespoons of the oil, and grind over some pepper.
  • Heat an ovenproof frying pan or griddle pan over a high heat and, when it is hot, pour in the rest of the oil and add the fillets to sear on all sides – this will take around four minutes. 
  • Squeeze a little lemon over the meat and then add all the slices to the pan. Scatter with the lemon thyme and chilli flakes. Put into the oven to roast for 15 minutes.
  • Scatter the capers and pine nuts over the meat and continue roasting for five minutes. Poke the meat – it should still feel a little bouncy. Rigid meat is overcooked.
  • Lift out of the oven and leave to rest for 10 minutes.
