Number Of Ingredients 9

2 cups buckwheat groats (not kasha)
1 cup water (plus more for soaking)
1/2 tsp sea salt
1/2 to 1 cup gluten-free flour of choice
1 tbsp sugar
1/2 tsp salt
1 tsp baking powder
1 tbsp oil
1 egg

Steps:

  • Ferment the buckwheat: soak 2 cups buckwheat groats in enough water to cover for 8 hours - overnight. Strain excess water from the groats, but do not rinse - the egg-white-like goop is what makes the fermentation magic happen.
  • Add soaked groats to blender with 1 cup water and 1/2 tsp salt. Blend until it becomes a batter-like texture. Pour into a glass bowl and cover with a tea towel. Let ferment at room temperature for 6-8 hours or overnight. You will see little bubbles in the batter as it ferments. This batter can also be used for bread, muffins, waffles, etc.
  • Make the pancakes: pour half of the fermented buckwheat into a large bowl. The other half can be stored in the refrigerator for later use. To the buckwheat, add your flour of choice (the flour can also be omitted if desired and these will still turn out!), sugar, salt, baking powder, oil, and egg. You may also add berries, nuts, vanilla, cinnamon, etc. Stir to combine, adding a bit of water or milk as needed for the desired consistency.
  • Scoop by 1/4 cupfuls into a hot pan, and flip when cakes are bubbling on top and lose their glossy sheen. Serve with berries, cream and/or maple syrup. Enjoy!
