Cook Time 6 hours 0 minutes

Yield 6 beefsticks

Number Of Ingredients 13

4 pounds ground beef
1 pound spicy pork sausage
2?½ teaspoons mustard seed
2?½ teaspoons liquid smoke flavoring
1 tablespoon Worcestershire sauce
1 tablespoon garlic powder
5 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 tablespoon cracked black pepper
1 tablespoon caraway seed
2 teaspoons cayenne pepper
2 teaspoons paprika
2 teaspoons chili powder
2 teaspoons red pepper flakes

Steps:

  • In a large bowl, mix together the ground beef, pork sausage, mustard seed, liquid smoke, Worcestershire sauce, garlic powder, curing salt, black pepper, caraway seed, cayenne pepper, paprika, chili powder and red pepper flakes. Cover, and refrigerate overnight.
  • For the next three days, knead the meat for 5 minutes, then return to the refrigerator. On the fourth day, knead, then form into 6 equal logs. Wrap each log in aluminum foil, and poke a few holes in the foil.
  • Preheat the oven to 200 degrees F (95 degrees C). Place the logs onto a broiler pan to catch the grease. Bake for 6 hours in the preheated oven. Turn off the oven, and leave the logs in for another 3 hours after baking. Refrigerate until chilled, then slice and serve.

LOW-FAT BAKED CHEESE STICKS RECIPE - FOOD.COM
Make certain that the cheese sticks are very well coated with the egg/water mix and the cereal coating, or the cheese will flow out when baking, also let the cheese sticks sit out for 30 minutes to dry out the outer crumb coating before baking, the cornflakes must be very finely crushed or they will not adhear to the sticks, these steps are very important --- prep time includes drying out for 30 minutes.

BEEF STICKS - TASTE OF ARTISAN
Oct 30, 2019 · My recipe started from the sausage stick recipe published by Rytek Kutas in his Great Sausage Recipes and Meat Curing book. I tried that recipe many years ago and transformed it into what I now consider the best beef stick recipe, for my taste at least. This recipe requires fresh beef chuck, 20/80 fat to meat ratio, though any beef cut can be used.
