1 box(es) angel food cake mix
1 can(s) (22 ounces) lemon pie filling or 1 jar of lemon spread
1 cup(s) shredded coconut (optional)
FROSTING (OPTIONAL)
1 package(s) (8 ounces) cream cheese, softened
1/2 cup(s) butter, softened
1 teaspoon(s) vanilla or lemon extract
2-1/2 cup(s) powdered sugar
3 teaspoon(s) grated lemon zest

Steps:

  • Line a deep 9 X 13 inch baking pan with parchment paper. In a large bowl, whisk the angel food cake mix, lemon pie filling and coconut for 1-2 minutes.
  • Pour the batter into the baking pan and bake at 350 degrees for 30 to 40 minutes. Cut the parchment paper so that it comes up the side of the pan, so batter does not spill as it bakes. Cool completely in pan on wire rack
  • FROSTING: In a large bowl, beat cream cheese, butter and vanilla until smooth. Gradually beat in powdered sugar. Spread over cooled bars; sprinkle with lemon zest. Refrigerate 4 hours. Cut into bars. Instead of frosting you can top with powdered sugar.

Crust
2 cups all-purpose flour
1 cup Land O Lakes® Butter softened
1/2 cup powdered sugar
Filling
1 1/2 cups sugar
1/4 cup fresh lemon juice
4 large Land O Lakes® Eggs
1/4 cup all-purpose flour
2 to 3 teaspoons freshly grated lemon zest
1 teaspoon baking powder
Topping
1 teaspoon Powdered sugar

Steps:

  • Heat oven to 350°F.
  • Combine all crust ingredients in large bowl. Beat at low speed until mixture resembles coarse crumbs. Press mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 20-22 minutes or until light brown; remove from oven.
  • Combine all filling ingredients in bowl. Beat at medium speed until well mixed. Pour lemon mixture evenly over hot, partially baked crust.
  • Continue baking 15-20 minutes or until filling is set and bars are light brown around edges. Cool completely.
  • Sprinkle bars with powdered sugar. Cut into bars.
