ALMOST-FAMOUS ANIMAL-STYLE BURGERS RECIPE | FOOD NETWOR…

Almost-Famous Animal-Style Burgers Recipe | Food Networ… image

No one knows how In-N-Out’s Animal-Style burger got its name, but customers have been ordering it since the ’60s, even though it has never actually appeared on the menu. “Animal Style” is code for a patty grilled in mustard and served with lettuce, tomato, pickles, grilled onions and an extra helping of the California-based chain’s signature sauce. (“Double-Double” means two patties with cheese.) The official recipe is a secret, but Food Network Kitchens created this close second.

Total Time 55 minutes

Cook Time 55 minutes

Yield 4 burgers

Number Of Ingredients 15

2 tablespoons vegetable oil, plus more for brushing
2 large onions, finely chopped
Kosher salt
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon sweet pickle relish
1/2 teaspoon white vinegar
2 pounds ground beef chuck (preferably 60% lean)
4 hamburger buns, split
1/4 cup sliced dill pickles
3/4 cup shredded iceberg lettuce
4 to 8 thin slices tomato
Freshly ground pepper
1/4 cup yellow mustard
8 slices American cheese

Steps:

  • Heat the vegetable oil in a large skillet over medium-low heat. Add the onions and 3/4 teaspoon salt, cover and cook, stirring occasionally, until golden and soft, about 30 minutes. (If the onions brown too quickly, reduce the heat to low.) Uncover, increase the heat to medium high and continue to cook, stirring often, until caramelized, about 8 more minutes. Add 1/2 cup water to the skillet, scraping up any browned bits from the bottom of the pan. Simmer, stirring, until the water evaporates, about 2 more minutes; transfer to a bowl and set aside. (The onions can be made up to 3 days ahead; cover and refrigerate, then reheat before using.)
  • Mix the mayonnaise, ketchup, relish and vinegar in a bowl; set aside. Shape the beef into 8 patties, about 4 inches wide and 1/2 inch thick.
  • Heat a griddle or skillet over medium heat; lightly brush with vegetable oil. Toast the buns on the griddle, split-side down. Spread each toasted bun bottom with about 1 tablespoon of the mayonnaise mixture, then top with a few pickles, some lettuce, 1 or 2 slices tomato and another dollop of the mayonnaise mixture; set aside. (Keep the griddle hot.)
  • Season both sides of the patties with salt and pepper. Working in batches if necessary, put the patties on the griddle and cook 3 minutes. Spread about 1 1/2 teaspoons mustard on the uncooked side of each patty, then flip and top each with 1 slice cheese; continue cooking about 2 more minutes for medium doneness. Top 4 of the patties with caramelized onions, then cover with the remaining patties, cheese-side up. Sandwich the double patties on the buns.

ALMOST-FAMOUS SWEDISH MEATBALLS RECIPE | FOOD NETWO…

Almost-Famous Swedish Meatballs Recipe | Food Netwo… image

Some people drive for hours to get to an Ikea store, and we know they aren’t making the trek just for the $9.99 chairs. They’re going for the Swedish meatballs. The dish has been a main attraction at Ikea Restaurants since an in-store chef developed the recipe in Switzerland in 1985. Although Ikea’s Real Swedish Food Book, published in 2000, included a meatball recipe, reps confirmed that it is not the one served at their restaurants. Ikea is keeping that baby a secret, so chefs in Food Network Kitchens hit a nearby store for a tasting, then created this spot-on copy.

Total Time 50 minutes

Cook Time 45 minutes

Yield About 45 meatballs

Number Of Ingredients 20

1 cup breadcrumbs
2 tablespoons unsalted butter
1/3 cup minced white onion
2 cloves garlic, minced
1/4 teaspoon ground allspice
Kosher salt and freshly ground white pepper
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 pound lean ground beef
1/2 pound lean ground pork
1 large egg plus 1 egg white, beaten
Vegetable oil, for brushing
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley (optional)
Lingonberry jam, for serving (optional)

Steps:

  • Make the meatballs: Put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. Add the onion, garlic, allspice, 2 teaspoons salt and 1/4 teaspoon white pepper and cook, stirring, until soft, about 5 minutes. Add the milk and Worcestershire sauce and bring to a simmer. Pour the milk mixture over the breadcrumbs and stir to make a thick paste; let cool. Add the beef, pork, egg and egg white to the bowl and mix until combined.
  • Brush a baking sheet with vegetable oil. Roll the meat into 1-inch balls and arrange on the prepared baking sheet. Cover with plastic wrap and refrigerate at least 1 hour.
  • Preheat the oven to 400 degrees F. Bake the meatballs until cooked through, about 20 minutes.
  • Make the gravy: Melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until smooth. Whisk in the beef broth and Worcestershire sauce and bring to a simmer. Add the cream and meatballs. Reduce the heat to medium low and simmer until the gravy thickens, about 10 minutes. Season with salt and black pepper. Transfer to a serving dish; sprinkle with the parsley and serve with lingonberry jam, if desired.

  • You can cut these brownies into squares, once they have cooled, and eat them out of the pan, but it is so much nicer to pile them on a fancy plate, from which people are going to eat them with their hands anyway. If you want to smarten up your act you can put a square of brownie on a plate with a little blob of créme fraîche and a scattering of shaved chocolate.

TOP SECRET RECIPES | FAMOUS DAVE'S SMOKED SALMON SPREAD
Menu Description: "Our own hickory-smoked salmon, cream cheese, capers and chipotle peppers makes this a spread worth swimming upstream for. Served with fire-grilled flatbread." Famous Dave's is famous for making pork ribs so good you forget you're wearing the embarrassing bib. But before you get your face smeared with BBQ sauce, you may want to kick off your meal with this popular choice from the chain's appetizer column. Start with 4 ounces of the best smoked salmon you can find—it should be very smoky if you want to duplicate the same taste of the original. If you can't find salmon that's smoky enough, I found that adding a little hickory liquid smoke to the mix works perfectly to flavor the spread so that it tastes like Dave's version. You'll end up with twice the amount of spread as the original which makes this a great appetizer for a small party. You can even prepare the flatbread ahead of time, then wrap it up in foil and reheat it in the oven before serving.
