Rustic Fall Fruit Tart Recipe | Allrecipes image

This rustic tart is full of apples, fresh cranberries, walnuts, and spices, and is baked in a cream cheese pastry.

Number Of Ingredients 14

2 cups all-purpose flour
½ cup butter, chilled
½ cup cream cheese
1 tablespoon water, or as needed
4 apples - peeled, cored, and thinly sliced
? cup fresh cranberries
¼ cup brown sugar, or more to taste
¼ cup white sugar, or more to taste
2 tablespoons all-purpose flour
¾ teaspoon ground cinnamon
? teaspoon ground nutmeg
? cup roughly chopped walnuts, or more to taste
1 egg, beaten
1 tablespoon raw sugar

Steps:

  • Place 2 cups flour in a bowl. Cut butter and cream cheese into flour using a knife or pastry blender until mixture resembles coarse crumbs. Gently mix water into flour mixture until dough forms into a ball.
  • Mix apples and cranberries with brown sugar, white sugar, 2 tablespoons flour, cinnamon, and nutmeg in a bowl until coated.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  • Roll dough onto a lightly floured work surface, forming about an 11-inch circle. Transfer dough to the prepared baking sheet. Arrange apple-cranberry mixture decoratively on the dough, leaving a 2-inch rim of exposed dough. Sprinkle walnuts over apple-cranberry mixture. Fold exposed crust up and over the edge of the fruit.
  • Brush egg over the crust and around the edge of the tart; sprinkle with raw sugar.
  • Bake in the preheated oven until crust is browned and filling is tender, 30 to 35 minutes.

2 cups all-purpose flour
1 teaspoon white sugar
¼ teaspoon salt
1 teaspoon baking powder
1 cup lard
? cup cold water
1 egg yolk
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar

Steps:

  • In a medium bowl, mix together flour, sugar, baking powder, and salt. Cut in lard until mixture resembles coarse meal.
  • In a separate bowl, whisk together water, egg yolk, vanilla extract, and vinegar. Stir into flour mixture and knead dough briefly, just until smooth. Allow to rest 15 minutes before rolling out. Pastry is easier to work with when chilled. Can be stored in refrigerator for up to 1 week.

  • Unfold piecrusts on a lightly floured surface. Cut leaves from piecrust using leaf-shaped cutters. Mark leaf veins using the tip of a small paring knife. One (15-ounce) package of refrigerated piecrusts will make about 24 (2- to 3-inch) leaves.To make the tinted egg wash, whisk together 3 large eggs and 2 tablespoons water. Pour mixture evenly into small cups, tinting each with a few drops of liquid food coloring to create different colors. (We painted our leaves using four different colors of egg wash--red, yellow, orange, and green. For easy cleanup and to prevent the excess egg wash from burning on the baking sheet, paint leaves on pieces of parchment or wax paper.) Brush leaves evenly with egg wash, beginning with lighter colors first, and overlaying with areas of darker color. Use a small artist's brush to add accents of bolder color with undiluted liquid food coloring. Crumple 2 (14-inch long) pieces of aluminum foil into 1-inch-wide strips. Coat with vegetable cooking spray, and place on a baking sheet lined with parchment paper. Gently drape pastry leaves over the strips of aluminum foil to give them a natural-looking shape; place several leaves on the baking sheet. Bake at 400° for 6 to 8 minutes or until golden. Cool on the baking sheet on a wire rack 10 minutes. Gently remove leaves, and cool completely on a wire rack. Repeat procedure with remaining leaves.
