Le fajitas sono un'appetitosa ricetta della cucina tex-mex, morbide tortillas che avvolgono un ripieno di carne di manzo e pollo, peperoni e cipolle!

Controfiletto di manzo 400 g
Petto di pollo 400 g
Peperoni rossi 350 g
Peperoni gialli 350 g
Cipolle bianche 250 g
Lime 1
Worcestershire sauce 20 g
Coriandolo 10 g
Cumino in polvere 1 pizzico
Olio extravergine d'oliva q.b.
Sale fino q.b.
Pepe nero q.b.
Tortillas di farina 8
Edamer da tagliare a julienne q.b.
Fagioli neri precotti q.b.
Salsa di pomodori messicana q.b.
Guacamole q.b.

Steps:

  • Per realizzare le fajitas, per prima cosa preparate la carne: tagliate il controfiletto a fette 1 , poi riducetelo a striscioline 2 e fate la stessa cosa con il petto di pollo 3 .
  • Trasferite le striscioline di carne in una pirofila 4 e aggiungete la scorza grattugiata di un lime 5 e il suo succo 6 .
  • Unite anche il coriandolo tritato 7 , il cumino, sale e pepe. Mescolate con le mani per amalgamare bene tutti i sapori 8 , poi coprite con pellicola 9 e lasciate marinare in frigorifero per un’ora.
  • Nel frattempo potete occuparvi delle verdure: mondate la cipolla e tagliatela a fettine 10 , poi eliminate i semi e filamenti interni dai peperoni e tagliateli a striscioline 11 . Trascorso il tempo della marinatura, lasciate tornare la carne a temperatura ambiente e scaldate una padella capiente. Quando sarà ben calda aggiungete un filo d’olio, la cipolla e i peperoni 12 .
  • Cuocete a fuoco medio-alto per circa 10 minuti, dopodiché regolate di sale 13 e pepe. A questo punto unite anche la carne 14 , alzate la fiamma e fatela rosolare per bene, poi sfumate con la salsa Worcestershire 15 e cuocete per circa 5-6 minuti.
  • Quando il ripieno è pronto 16 , potete assemblare le vostre fajitas. Scaldate leggermente le tortillas su una piastra, aggiungete il ripieno al centro 17 e farcite con i vostri ingredienti preferiti: noi abbiamo scelto fagioli neri 18 ,
  • formaggio edamer 19 , salsa guacamole e pico de gallo . Richiudete i lembi della tortilla sopra al ripieno 20 e gustate le vostre favolose fajitas 21 !
