HEALTHY FAJITA-STUFFED CHICKEN RECIPE BY TASTY

Steps:
- Preheat oven to 400°F (200°C).
- In a small bowl, mix together all of the fajita seasoning ingredients and set aside.
- Heat 1 tablespoon of the oil in a large, ovenproof skillet. Toss in the bell peppers and onions and sprinkle on 2 teaspoons of the fajita seasoning. Sauté until the veggies have softened, about 6 minutes.
- Using a sharp knife, slice into the side of a chicken breast to form a large pocket, being careful not to cut all the way through.
- Spoon in some of the fajita pepper mixture so that the breast is comfortably stuffed.
- Season the chicken on both sides with fajita seasoning.
- Heat the remaining oil in the skillet and brown the chicken, about 4-5 minutes per side.
- Transfer the skillet to the oven and bake for 10-15 minutes, until the meat is cooked through.
- Let the chicken rest for 5 minutes before slicing.
- Enjoy!

- Preheat air fryer to 375°. Cut a pocket horizontally in the thickest part of each chicken breast. Fill with onion and green pepper. In a small bowl, combine olive oil and seasonings; rub over chicken., In batches, place chicken on greased tray in air-fryer basket. Cook 6 minutes. Top chicken with cheese slices; secure with toothpicks. Cook until a thermometer inserted in chicken reads at least 165°, 6-8 minutes longer. Discard toothpicks. If desired, serve with toppings of your choice.

- In a medium bowl, whisk together olive oil, lime juice, chili powder, garlic powder, and cumin. Toss chicken breasts in mixture, cover with plastic wrap, and refrigerate for at least 20 minutes and up to 4 hours. Preheat grill to medium-high. Before grilling, shake off excess marinade from chicken transfer to a plate. Season both sides of chicken with salt and pepper. Use a paring knife to create slits in each chicken breast about ½” apart. (Be careful not to cut all the way through!) Stuff chicken with bell pepper and onion. Lay out four pieces of foil. Place a stuffed chicken breast onto each, then top with each with cheese. Fold foil around chicken to create a packet. Place on grill and cook until chicken is cooked through and cheese has melted, about 20 minutes. Squeeze lime juice over chicken and garnish with cilantro.
