TOAD IN THE HOLE RECIPE | JAMIE OLIVER SAUSAGE RECIPES

Toad in the hole recipe | Jamie Oliver sausage recipes image

An all-time British classic – Toad in the hole with perfect gravy makes a knockout meal.

Total Time 50 minutes

Yield 4

Number Of Ingredients 11

sunflower oil
8 higher-welfare sausages
4 sprigs of fresh rosemary
2 large red onions
2 cloves of garlic
2 knobs of unsalted butter
6 tablespoons balsamic vinegar
1 level tablespoon vegetable stock powder or 1 organic vegetable stock cube
285 ml milk
115 g plain flour
3 large free-range eggs

Steps:

    1. Whisk the batter ingredients together with a pinch of sea salt, and put to one side. I like the batter to go huge so the key thing is to have an appropriately-sized baking tin – the thinner the better – as we need to get the oil smoking hot.
    2. Put 2 tablespoons of sunflower oil into a baking tin, then place on the middle shelf of your oven at its highest setting (240–250ºC/475ºF/gas 9). Place a larger tray underneath it to catch any oil that overflows from the tin while cooking.
    3. When the oil is very hot, add the sausages – keep an eye on them and allow them to colour until lightly golden.
    4. At this point, take the tin out of the oven, being very careful, and pour the batter over the sausages. Throw a couple of sprigs of rosemary into the batter.
    5. It will bubble and possibly even spit a little, so carefully put the tin back in the oven, and close the door. Don't open it for at least 20 minutes, as Yorkshire puddings can be a bit temperamental when rising. Remove from the oven when golden and crisp.
    6. For the onion gravy, peel and finely slice the onions and garlic, then simply fry off in the butter on a medium heat for about 5 minutes, or until they go sweet and translucent. You could add a little thyme or rosemary here, if you like. Add the balsamic vinegar and allow it to cook down by half.
    7. At this point, I do cheat a little and add a stock cube or powder. You can get some good ones in the supermarkets now that aren't full of rubbish. Sprinkle this in and add a little water. Allow to simmer and you'll have a really tasty onion gravy.
    8. Serve at the table with the Toad in the hole, mashed potatoes, greens and baked beans or maybe a green salad if you're feeling a little guilty!

EASY MEATBALLS RECIPE | BBC GOOD FOOD

Easy meatballs recipe | BBC Good Food image

BBC Good Food magazine's food editor Barney & his daughter Maisie love making these sausage and beef meatballs to serve on spaghetti with hidden vegetable tomato sauce

Provided by Barney Desmazery

Categories     Main course

Total Time 1 hours 40 minutes

Prep Time 1 hours

Cook Time 40 minutes

Yield Makes 40 meatballs, which will feed a family of 4 twice

Number Of Ingredients 21

300g good-quality pork sausage (about 4 large or 8 chipolatas)
1 small onion
1 carrot
1 tbsp dried oregano
500g lean beef mince
50g parmesan , finely grated, plus extra to serve
75g dried breadcrumb
1 medium egg
1 tbsp olive oil
1 carrot (finely grated)
2 sticks of celery (grated)
1 courgette (coarsely grated)
3 garlic cloves (finely grated)
2 red peppers
1 tbsp olive oil
1 tbsp tomato purée
pinch golden caster sugar
splash red wine vinegar
3 x 400g tins chopped tomatoes
cooked spaghetti , to serve
handful basil leaves , snipped

Steps:

  • KIDS the writing in bold is for you. GROWN-UPS the rest is for you. Squeeze some sausages. Get your child to squeeze all the sausagemeat out of the skins into a large bowl. They can hold the sausages or do it by squashing them on a board.
  • Get grating. Get your child to coarsely grate the onion and finely grate the carrot. If the onion starts to hurt their eyes, get them to wear goggles, which is good fun. Grating can take a bit of strength, so you may need to help. Tip these vegetables in with the sausages. While you have the grater out, grate the Parmesan, other vegetables and garlic for the sauce, and set aside.
  • Make a marvellous mix. Next, get your child to add all the other meatball ingredients one by one, except the olive oil, into the bowl and season with black pepper.
  • Squish everything together. Get the child to squish everything together through their hands until completely mixed. Keep an eye on younger children to make sure that they don’t taste any of the raw mix.
  • Roll meatballs. Children as young as three can now roll the meatball mix into walnut-sized balls, then place them on a board or tray. This mix should make 40 balls – counting these is great way to help teach older children basic division. Cover the meatballs with cling film and have a little tidy up.
  • Prepare the red peppers. Firstly, peel the peppers with a vegetable peeler, cut off the tops and bottoms and remove the seeds. Cut the peppers in half and children from the age of four can cut the peppers into strips.
  • Make the sauce. A grown-up will need to help here. Heat the oil in a large saucepan. Add the vegetables and garlic and cook for 5 mins. Stir in the tomato purée, sugar and vinegar, leave for 1 min then tip in the tomatoes and simmer for 5 mins. Get the child to help blitz the sauce with a hand blender. Gently simmer the sauce while you cook the meatballs.
  • Cook the meatballs. Brown the meatballs in the olive oil on all sides then pop them into the sauce, working in batches if necessary. Simmer the meatballs in the sauce for 15 mins, gently stirring until they are cooked through. It’s ready to eat now or cool and freeze in suitable batches for up to 6 months. Serve with spaghetti, some basil and extra Parmesan, if you like.

NUTS 4 NUTS RECIPE | HOW TO MAKE NUTS ... - TOP SECRET RECIPES
The streets of New York City are peppered with Nuts 4 Nuts vendors selling freshly candied nuts that you can smell a block away. For a buck or two you get your choice of warm, sugar-coated almonds, peanuts, or cashews wrapped up in a little paper bag with the corners twisted closed. The nuts are candied right there on the carts in a large metal bowl over a heating element. When the nuts are added to sugar and water they are stirred vigorously until the water evaporates and the sugar crystallizes into a crunchy coating, without burning. They're easy to make on the street, which means they're even easier to clone at home. All you need for your own quick version of this addictive street snack is 1 1/2 cups of your favorite raw nuts, some sugar, a little water, and a hot saucepan, and you're about 4 minutes away from an authentic New York City treat. The recipe works best in a pan that isn't nonstick, and the nuts must be raw. The oil added to roasted nuts prevents the sugar from properly crystallizing. Use this recipe with pecans or walnuts, and then sprinkle them over fresh spinach or baby greens, along with a little goat cheese or Gorgonzola and some diced apple or pear for an easy gourmet side salad.
