EVERYTHING CRACKER RECIPE RECIPE | VERMONT CREAMERY
These versatile crackers from Brett Braley are a delicious addition to a cheeseboard or for snack time. The fresh goat cheese adds to the depth of flavor of these crackers and makes a super forgiving dough that's easy to work with.

Steps:
- Preheat oven to 450°F.
- Line a baking sheet with parchment paper or a Silpat.
- In a mixer or food processor (or by hand!), mix all ingredients, except for the everything bagel seasoning, until the dough comes together.
- Let sit for five minutes.
- Flour a work surface and roll out dough about 1/8-1/4". (see note below)
- Sprinkle Everything Bagel seasoning over the top of the cracker dough. Use as much as you want!
- Pat or gently roll the seasoning into the dough.
- Cut dough with a pizza cutter into rectangles.
- Transfer to prepared baking sheet and poke crackers with fork tines.
- Bake for around 12 minutes or until edges are crispy.
- Note: This recipe is extremely forgiving. You can make them a little thicker, a little thinner. You can add herbs to the dough or another seasoning on top. You can over bake a little or under bake a little. You can even double the batch. It's very versatile!

Everything Bagel Crackers - Homemade cheddar cheese crackers topped with a delicious everything bagel seasoning blend! These crackers are so easy to make and taste just like an everything bagel!

- Preheat oven to 350 degrees and line a baking sheet with a silicon mat or parchment paper. Set aside.
- In a small mixing bowl, combine ingredients for the everything bagel seasoning. Mix and then set aside.
- In a large mixing bowl, combine white cheddar cheese, flour, butter, and cayenne pepper. Mix together and then add in butter. Using either a pastry cutter or two knives, cut the butter into the dry ingredients. Continue to do that until pea-sized crumbs form. Add milk into the dough and mix until it is well combined. The dough should be formed into a ball, if not, add a little more milk, 1 tablespoon at a time until it does form.
- Divide the dough into two pieces and transfer the first onto a lightly floured surface. Using a rolling pin, roll the dough out until it is 1/4" thick. Using a kife or a pizza cutter, slice the dough into 1" thick columns and then across into 1" thick rows. This should lead to each of the crackers being 1"x1". Repeat with the remaining dough.
- Transfer the crackers to the sheet pan. In a small mixing bowl, beat egg yolk and then spread it on top of the crackers using a pastry bruch. Sprinkle the crackers with the everything bagel seasoning. Place in oven and bake 16-20 minutes or until the tops of the crackers are golden.

- In a bowl, combine flours, water, olive oil, honey, and salt. Mix to combine, kneading until the dough comes together in a smooth ball. If the dough is crumbly, add a bit more water to bring it together. Conversely, if it feels sticky, you can add more flour as needed.Wrap tightly in plastic wrap and refrigerate for at least 30 minutes or up to 24 hours.In a bowl, combine all seeds and spices and mix until evenly incorporated (seasoning blend can be made ahead of time and stored in a jar or airtight container for a few months).Position oven racks in the upper 1/3 and lower 1/3 of oven; preheat to 350 degrees F. Line two baking sheets with parchment or silicone baking mats.Cut dough in half; put one half back in the fridge while you roll out the other. Brush a thin layer over top of crackers, then sprinkle with a generous layer of Everything seasoning. Press lightly or run over with a rolling pin to adhere.Bake for 10 to 14 minutes or until lightly golden brown and crispy, rotating the pans top to bottom and back to front part way through baking. Keep a close eye on them and don’t let them overcook; unlike other seasonings, the garlic is especially prone to bitterness if overbaked.Let cool, then transfer crackers to a cooling rack. Repeat with remaining dough.Crackers will keep in an airtight container at room temperature for up to one week.
