This is a fabulous cake that I serve when having a coffee night! :-) Its spectacular...people love the look of it!

Cook Time 30 minutes

Yield 1 8inch square cake

Number Of Ingredients 14

2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon instant espresso powder
1/3 cup milk
1 (3 ounce) package cream cheese, softened
1/2 cup butter, softened
1 tablespoon instant espresso powder
1/3 cup milk
1 (1 lb) package 10-x confectioners' sugar
3 chocolate-covered espresso beans
2 leaves mint

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour an 8-inch square baking pan.
  • To prepare your frosting: Beat cream cheese and butter in a large mixing bowl at medium speed until smooth.
  • Dissolve the instant espresso in milk.
  • Add confectioners sugar to cream cheese mixture alternately with milk mixture, beating 1-2 minutes or until blended.
  • Remove 1 cup of frosting from bowl and set aside.
  • To prepare your cake: Using a mixer (on low speed!!) add eggs to remaining frosting in mixing bowl.
  • Add vanilla and beat until blended.
  • In small bowl, combine flour, baking powder and salt.
  • Dissolve espresso granules in milk.
  • Add flour mixture to mixing bowl alternately with milk mixture and continue beating 1-2 mins or until well blended.
  • Pour cake mixture into pan and bake 30-40mins or until a toothpick inserted into center comes out clean.
  • Cool cake for 10 minutes and remove from pan.
  • Cool cake completely.
  • Place cake on serving plate.
  • Spread sides and top of cake with frosting that was set aside.
  • Place 3 chocolate covered espresso beans on center of cake and place mint leaves on either side of beans, pointing in towards the center of the beans-- as leaves would be on a flower!

1 stick unsalted butter, at room temperature
1 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon kosher salt
1 cup sour cream
1 cup dark brown sugar, packed
2 teaspoons instant espresso powder (not instant coffee)
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
8 tablespoons unsalted butter, melted

Steps:

  • 1. Preheat the oven to 350?F. Spray a 9-inch-by-9-inch cake pan with baking spray. 2. Make the cake batter: In the bowl of a stand mixer fitted with the paddle attachment, cream the butter with the sugar on medium speed until light and fluffy, about 3 minutes. Add the eggs and mix to combine. 3. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Add the dry ingredients to the wet in three additions, alternating with the sour cream and starting and ending with the dry. Set aside while you make the streusel. 4. Make the streusel: In a medium bowl, mix together the brown sugar, espresso powder and cinnamon. Set aside about ? of this mixture for the middle layer of the coffee cake. To the remaining mixture, add the flour and salt and stir until combined. Add the melted butter and mix until combined. 5. Spread half of the batter into the prepared pan, then top with the reserved brown sugar mixture. Top with the remaining batter, followed by the streusel. 6. Bake until a cake tester inserted in the center of the pan comes out clean or with just a few moist crumbs, 45 to 55 minutes. Cool the cake completely before slicing and serving.

  • 1. Make the Cake: With a rack in the center, preheat the oven to 325?F. Generously spray a 10-inch Bundt pan with nonstick spray and set aside. Watch it closely, as once the sugar is fully dissolved, it will turn from clear syrup to caramel quickly. Do not stir the sugar and water until you see it start to change color, as this can cause crystallization. 5. When you see the first signs of caramelization, carefully swirl the syrup around in the pan a few times so it colors evenly. Once it takes on a honey hue and reads 355 to 360?F on a thermometer, reduce the heat to low and carefully pour in the heated dairy mixture, stirring to fully incorporate. Add the salt and espresso powder and whisk well, simmering for 1 minute. Turn off the heat and add the powdered sugar, whisking until smooth. 6. Pour the glaze over the top of the cooled cake, letting it drip down the sides. Garnish with a little flaky sea salt and allow the glaze to set for 10 minutes before slicing.
