This is one of the best egg bakes I've ever put together. The combination of ham, potatoes, spinach and the sharp cheddar cheese was just awesome. It was so easy too, the longest part of putting together was the browning of the potatoes. If ever wanting a delicious breakfast bake to impress guests, this would be it. I will be serving this one Christmas morning, as it makes for a beautiful presentation. Yum! Great to Church brunch as well. Enjoy!

Number Of Ingredients 21

EGG MIXTURE
12 - eggs
1/2 cup(s) milk
1/4 cup(s) heavy cream
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 tablespoon(s) parsley paste
POTATO MIXTURE
oil - for browning potatoes
1 bag(s) 28 - 30 ounce - o'brien frozen potatoes - thawed
1/4 - 1/2 tube(s) red pepper flakes - optional
1/2 medium onion, chopped
1/4 teaspoon(s) pepper
sprinkling - season salt or to taste - i sprinkled to cover top of potatoes - about 1/2 - 3/4 teaspoon
8 ounce(s) cooked ham, cubed
TOPPINGS
1/2 - of a 10 ounce bag of baby spinach, chopped large
2 ounce(s) cooked, cubed ham
8 ounce(s) block, sharp cheddar cheese, shredded - divided
1 tablespoon(s) dried parsley flakes
2 large roma tomatoes, sliced

Steps:

  • In a large skillet over medium heat - add 2 - 3 tablespoons oil. Once hot, add potatoes, 8 ounces of the ham, onion, season salt, red pepper flakes if using, pepper - cook until browned, stirring occasionally and add more oil as needed.
  • Preheat oven to 350 degree F. Grease a 9 x 13 baking dish. In prepared dish, evenly spread out the potatoes. Sprinkle with spinach, evenly.
  • Sprinkle with remaining ham and 2 cups of shredded cheese, evenly.
  • In a large bowl, blend eggs with parsley paste, milk, cream, salt and pepper to taste. Beat well, then pour evenly over spinach. Evenly place tomatoes on top and sprinkle with remaining cheese. Sprinkle with 1 tbsp dried parsley flakes.
  • Place in oven and bake for 40 - 45 minutes or until all egg is visibly cooked.
  • I let set up for 5 minutes before cutting. Cut into individual serving and enjoy!
