This recipe was actually given my Tisa, who have an undying love for enoki mushroom. She said, “I eat enoki mushroom as if I were eating noodles.” Quick and easy stir fry enoki mushroom, goes great with rice too!

400 gram Enoki Mushroom
100 gram Firm Tofu
1 Red Bird's Eye Chili Pepper
1 clove Garlic
to taste Salt
to taste Ground Black Pepper
to taste Soy Sauce

Steps:

  • Remove the roots and wash the Enoki Mushroom (400 gram). Drain well.
  • Mince Garlic (1 clove) and Red Bird's Eye Chili Pepper (1).
  • Cut Firm Tofu (100 gram) into bite sized pieces.
  • Add oil to a work. Stir in chili padi and garlic and saute until aromatic.
  • Add in enoki mushrooms. Drizzle on some Soy Sauce (to taste). Season with Salt (to taste) and Ground Black Pepper (to taste). Saute until water from mushrooms is released.
  • Bring to a boil. Shut off heat and transfer to a dish.
  • Serve hot with rice. Serve and enjoy!

8 ounces enoki mushrooms
1 teaspoon sesame oil
1 large clove garlic, finely chopped
1 teaspoon low-sodium soy sauce (such as Bragg®)
½ teaspoon finely grated fresh ginger

Steps:

  • Cut the bottom 2 inches off the mushrooms and discard. Separate the mushroom strands gently.
  • Heat oil in a medium-sized nonstick skillet over medium heat. Add garlic and cook until just fragrant, about 1 minute. Add mushrooms and stir-fry until they begin to wilt, about 2 minutes. Add soy sauce and ginger; toss to coat. Cook 1 to 2 minutes more.
