225 g Self Raising Flour
50 g Butter
28 g Caster Sugar
60 ml Whole Milk
Egg Wash
Extra Virgin Olive Oil Spray
Squirty Cream (optional)
Fresh Strawberries (optional)
Strawberry Jam (optional)

Steps:

  • Place flour and sugar in a bowl and mix. Add in cubed butter.
  • Rub the fat into the flour. Do this with your fingertips until it resembles coarse breadcrumbs.
  • Add in enough milk to make a soft dough, for us this was 60ml. Then roll out your dough on a floured worktop and aim for at least 1.5cm thick or your scones will be too small.
  • Using cutters, cut your dough to medium sized scones and then place in the air fryer basket.
  • Spray the air fryer basket with extra virgin olive oil to prevent sticking and then brush the tops and sides of the scones with egg wash.
  • Air fry for 5 minutes on 180c/360f, followed by a further 2 minutes at 160c/320f.
  • Serve with strawberry jam, sliced strawberries and cream.

2 cups sifted all-purpose flour (256gm)
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (3ml)
1/4 cup margarine or 1/4 cup butter
1 cup milk
2/3 cup grated cheddar cheese
1/4-1/2 teaspoon dried oregano

Steps:

  • Sift the flour, sugar, baking powder, baking soda and salt together. Add grated cheese and dried oregano and mix.
  • Cut in the margarine or butter till mixture resembles fine breadcrumbs.
  • Add the milk and mix to make a smooth dough. (add more milk if necessary to ensure mix is not too dry) Knead very lightly for ten seconds on a lightly floured surface.
  • Roll or pat to about 3/4" thick (2 cm) and cut into individual scones.
  • Top each scone with a little additional cheese and bake for approximately 12 minutes. Brush the tops with melted butter after removing from the oven.

    1. Gently warm the milk in a pan till lukewarm or body temperature, 37ºC. Add the yeast and sugar and stir until the sugar is dissolved. Set aside for a few minutes until the mixture is creamy and starting to froth.
    2. Melt the shortening or lard, then in a large bowl, mix the yeast mixture, flour, shortening or lard and a pinch of sea salt into a soft dough. Add a little extra milk or flour, if needed.
    3. Knead until smooth and elastic. Transfer to a greased bowl, cover with clingfilm and set aside in a warm place to rise for 1 hour, or until doubled in size.
    4. Knock back the dough and roll out on a lightly floured surface to about 2cm thick. Using a round cutter or thin drinking glass, cut out circles of 5 to 8cm.
    5. Lightly sprinkle a piece of baking parchment with extra flour, or polenta (if using). Transfer the muffins to the paper and sprinkle over a little more flour or polenta. Cover with a tea towel and leave in a warm place for 45 minutes to 1 hour to rise.
    6. When ready to cook, preheat the oven to 170ºC/gas 3 and heat a heavy non-stick pan over a medium heat.
    7. Brown the muffins in the pan, in batches, for a few minutes each side, then turn the heat to low and cook for 10 minutes. Transfer to a baking tray and finish with 5 minutes in the oven, or until cooked through.
    8. Cool slightly on a wire rack then split open and spread with melted butter, or keep in an airtight tin, to split and toast as needed.
