Empanada Dough Recipe Recipe - Epicurious image

This empanada dough recipe can be used to make any kind of empanada, including chicken empanadas, potato and chorizo empanadas, and more.

Yield Makes enough for 12 pastries

Number Of Ingredients 6

2¼ cups unbleached all-purpose flour
1½ teaspoons salt
1 stick (½ cup) cold unsalted butter, cut into 1/2-inch cubes
1 large egg
⅓ cup ice water
1 tablespoon distilled white vinegar

Steps:

  • Sift flour with salt into a large bowl and blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some (roughly pea-size) butter lumps.
  • Beat together egg, water, and vinegar in a small bowl with a fork. Add to flour mixture, stirring with fork until just incorporated. (Mixture will look shaggy.)
  • Turn out mixture onto a lightly floured surface and gather together, then knead gently with heel of your hand once or twice, just enough to bring dough together. Form dough into a flat rectangle and chill, wrapped in plastic wrap, at least 1 hour.

1 cup Butter/Margarine (chilled & cubes)
7-8 tbsps Cold Water
275 g Fillet Chicken Breast (boiled & cubes)
1 small White Onion (diced)
1 med. Carrots (diced)
1 large Potato (cubed)
4 small Green Chillies (minced)
1 tsp. Salt & Black Pepper (to taste)
2 tsp. Magic Sarap
2 tbsps Curry Mix (Del Monte)
1/2 cup Unsalted Chicken Stock (from boiled chicken breast)
1 cup Oil (for frying & saute)

Turn dough out on a lightly floured surface and knead until smooth, about 5 minutes.  Wrap in plastic wrap and refrigerate for at least 1 hour.  Preheat oven to 400° and line two large baking sheets with parchment paper. In a large skillet over medium heat, heat oil. Add onion and cook until soft, about 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add ground beef and cook, breaking meat up with a wooden spoon, until no longer pink, 5 minutes. Drain fat. Return pan to medium heat, and stir tomato paste into beef. Add oregano, cumin, and paprika, and season with salt and pepper. Add tomatoes and jalapeños and cook until warmed through, about 3 minutes. Remove from heat and let cool slightly. Place dough on a lightly floured surface and divide in half.  Roll one half out to ¼” thick. Using a 4.5” round cookie cutter, cut out rounds. Repeat with remaining dough. Reroll scraps once to cut out more rounds.  Lightly moisten outer edge of a dough round with water and place about 2 tablespoons filling in center and top with cheddar and Monterey. Fold dough in half over filling. Use a fork to crimp edges together. Repeat with remaining filling and dough.  Place empanadas on prepared baking sheets and brush with egg wash.
