EGGNOG (SPIKED WITH RUM) RECIPE | ALLRECIPES
I was really never a fan of eggnog... until a friend gave me this proven recipe. It's simply the best! It's rich and creamy, just like melted vanilla ice cream. This makes almost a gallon and packs a punch... so drink responsibly.

Steps:
- Mix egg yolks, 2 cups sugar, rum, and nutmeg together in a large bowl. Cover with plastic wrap and refrigerate 8 hours to overnight to "cure."
- Beat egg whites and remaining 1 cup sugar in a bowl using an electric mixer until firm peaks form. Fold in heavy cream. Fold in the egg yolk mixture. Beat in half-and-half until well combined. Pour into lidded jars or containers, refrigerate, and shake before serving.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg, 1/3 cup eggnog and 1 teaspoon extract. In another bowl, whisk flour, baking powder, cinnamon, nutmeg, salt, ginger and allspice; gradually beat into creamed mixture., Divide dough in half and shape each portion into a disk; cover and refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 375°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 3-1/4-in. star-shaped cookie cutter. Place stars 1 in. apart on parchment-lined baking sheets., Bake until edges begin to brown, 8-10 minutes. Cool on pans 1 minute. Remove to wire racks to cool completely. For glaze, mix confectioners' sugar, remaining 3/4 teaspoon extract and enough remaining eggnog to achieve a drizzling consistency; drizzle over cookies. Decorate as desired.

- Preheat oven to 350º. Spray two 8-inch cake pans. Line bottoms of pans with parchment; spray parchment. In a medium bowl, whisk flour, baking powder, cinnamon, nutmeg and salt. In a large bowl, beat butter and sugar until light and fluffy, about 3 minutes. Add eggs and beat until fully combined. Add dry mixture and beat until combined. Add eggnog and vanilla and beat until combined. Pour batter into prepared pans. Bake until a toothpick inserted into the center comes out clean, 40 to 44 minutes. Cool completely. Meanwhile, make pudding: In a large bowl, whisk pudding mix, eggnog, bourbon, and nutmeg and stir until thickened, about 5 minutes. Fold in Cool Whip. Make frosting: In another large bowl using a hand mixer, beat butter with half the powdered sugar until smooth. Add remaining powdered sugar, eggnog, and salt and beat until fluffy. If mixture is too stiff, add more eggnog. Transfer half the frosting into a pastry bag fitted with a ½-inch round pastry tip. Level the top of each cake with a serrated knife to create even layers. Place down one cake and pipe frosting around the perimeter of the cake. Fill in center with vanilla pudding. Top with remaining cake. Using about 1 1/2 cups of frosting, smooth a crumb coat around outside of the cake. Transfer cake to refrigerator until frosting is hardened, 30 minutes to 1 hour. Spread outside of cake with remaining frosting.

- Place remaining buttercream in a large piping bag fitted with a large star tip. Pipe 1 ½-inch-wide tight zigzags up sides of cake, starting at the base each time and making sure each zigzag touches the one beside it. If desired, sprinkle cake with nutmeg.
