From DH's grandmother....she used raw eggs. Lately we have decided to cook them a bit, or use egg substitute. Absolutely the richest, best ice cream ever! Cook time is freezer time, which is approximate.

Yield 1 freezer

Number Of Ingredients 6

8 eggs, beaten or 2 cups egg substitute
6 cups sugar
3 tablespoons vanilla
1/2 gallon whole milk
3 1/2 pints whipping cream
1 pint half-and-half cream

Steps:

  • Combine all ingredients and freeze in ice cream freezer.
  • OR, if you prefer to cook the eggs:.
  • Heat the milk and sugar in a large pot on the stove.
  • Add a small amount of the mixture to the beaten eggs to heat.
  • Then slowly stir eggs back into the milk mixture on the stove.
  • Allow to cool, then add remaining ingredients and freeze.

Father's Day was never better for Dad than when us kids cranked the machine for ice cream: old fashioned, home made, hand-cranked vanilla ice cream. He really loved it with big, beautiful strawberries he grew on the farm. His 60+ year old recipe is posted but egg beaters can be substituted today for the eggs which are not cooked in the original recipe. We had our own eggs and got milk and heavy cream from a neighbor when we made this years ago. This recipe makes me think of my Dad's big smile when we opened that machine and began to scoop out the delicious, rich ice cream. Yumm......

Number Of Ingredients 6

4 large eggs (substitute egg beaters for safety reasons today)
2 1/4 cup(s) sugar
4 cup(s) milk
5 cup(s) half and half
5 teaspoon(s) vanilla
1/4 teaspoon(s) salt

Steps:

  • Beat eggs. Gradually add sugar and continue to beat until very stiff. Add remaining ingredients and mix completely. Pour into a 1 gallon hand-crank ice cream freezer and follow directions of machine to freeze. It takes lots of ice, salt, and a long time to hand crank that machine. An electric machine may also be used.
  • Serve with fresh strawberries, whipped cream, or any toppings you like.
