Chinese Sausage & Egg Fried Rice - Marion's Kitchen image

Salty, eggy, and porky – this is the fried rice that dreams are made of. Everyone has a favourite childhood dish that is comforting, warming and nourishing, and this my friends, is one of mine. It only takes 10 minutes to cook and is great for breakfast, lunch or dinner.

Number Of Ingredients 12

2 tbsp vegetable oil, plus 1 extra teaspoon
1 onion, diced
3 spring onions (scallions), finely sliced
4 garlic cloves, roughly chopped
2 Chinese sausages (lap cheong), thinly sliced
2 eggs, lightly whisked
3 cups cooked Jasmine rice*
1½ tbsp light soy sauce
1½ tbsp fish sauce
½ tsp ground white pepper
lime wedges to serve
cucumber slices to serve

Steps:

  • Heat 2 tablespoons of the vegetable oil in a wok or large frying pan over high heat. Add the onion, spring onion and garlic and stir-fry for half a minute or until just softened. Add the Chinese sausage and stir-fry for a minute or until the sausage is just starting to char. Then push everything to one side. Pour the extra teaspoon of oil into the empty side. Then add the egg to the oil. Use a spatula to move the egg around so that it forms a thin omelette. Once the egg is almost set, break it up and mix it into the other ingredients. Add the rice, soy sauce, fish sauce and pepper. Stir-fry until well combined. 2 cups cooked rice
1-1/4 cups cooked bulk pork sausage (1/2 pound uncooked)
1/4 cup thinly sliced green onions
4 eggs
3/4 cup milk
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet over medium heat, combine rice, cooked sausage and onions; heat through. In a bowl, beat eggs, milk, oregano, salt and pepper; add to rice mixture. Cook and stir until the eggs are completely set.

For me, combining the two wasn’t a stretch — I just swapped one carb for another. You won’t believe how good it is until you try it. My recipe is just a jumping-off point. At Talde, I use Filipino longaniza as the sausage, but any flavorful variety works. You could go Mexican with chorizo and then do Chihuahua cheese instead of American. You could use hot Italian and throw in some bell peppers with the onion and swap in provolone. The only rules are: (1) You’ve got to have hot sauce or something to cut the richness; and (2) Lord help you if you let American cheese cool. When I was younger I used to love my best friend's mom's sausage and rice caserole. I had no real idea how to cook or follow a recipe. I just made this one up and you know what I still love it.
