Not quite hard-boiled eggs, but these eggs have a solid soft white, with the yolk just beyond runny and not quite solid. serve with toast if desired.

6 large eggs
1 teaspoon everything bagel seasoning

Steps:

  • Pour 1 cup water into a multi-functional pressure cooker (such as Instant Pot®). Place eggs on a trivet in the bottom of the pot. Close and lock the lid. Select low pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Carefully remove eggs and place in an ice bath to cool, about 5 minutes.
  • Peel eggs under a stream of cold water and place on a drip rack or lightly pat with a paper towel to dry.
  • Cut eggs in half and garnish with bagel seasoning.

These Instant Pot egg bites are amazing! So easy to make in the Instant Pot, these egg bites come out perfect every time! What a perfect healthy breakfast on the go!

5 eggs
2 tbsp milk
1 stalk green onion (chopped (optional))
1/4 cup shredded cheese
1/8 tsp salt
1/8 tsp pepper
1 cup water

Steps:

  • Spray the inside of the egg bites mold with cooking spray.
  • Put the chopped green onion in the egg bites mold cups (if using other add-in, such as chopped ham, bacon or other vegetables, add them here).
  • In a cup with a pouring spout, whisk the eggs, milk, salt and pepper.
  • Pour the egg mixture into the egg bites mold cups, dividing evenly between the cups.
  • Put shredded cheese in the egg bites mold cups.
  • Cover the egg bites mold with the cover.
  • Put the trivet handles up inside the Instant Pot. Add water to the Instant Pot.
  • Carefully lower the covered egg bites mold inside the Instant Pot on a trivet.
  • Close the Instant Pot lid and turn the vent to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 10 minutes on High Pressure.
  • When the Instant Pot is done cooking, let the pressure release naturally (NR) for 10 minutes, then quick release the remaining steam.
  • Using silicone mitts or kitchen towel, carefully lift the trivet handles and get the egg bites mold out of the Instant Pot.
  • Open the lid of the egg bites mold and remove the egg bites from the mold.
