This is your basic old fashioned recipe for egg noodles, just like grammy used to make! Try making them next time you prepare your favorite soup or stew. Don't forget that fresh pasta cooks much quicker than dried! You may use a dough hook attachment on your electric mixer or your hands to make the pasta dough.

Number Of Ingredients 5

2?½ cups all-purpose flour
1 pinch salt
2 eggs, beaten
½ cup milk
1 tablespoon butter

Steps:

  • In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.
  • On a floured surface, roll out to 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes.
  • Allow to air dry before cooking.
  • To cook fresh pasta, in a large pot with boiling salted water cook until al dente.

Vegetable Egg Noodles Recipe is a famous recipe from the land of Kerala (India).

Number Of Ingredients 12

Plain Noodles - 2 cups
Baby peas - ½ cup
Tomato Juice - 2 tsp
Eggs - 2 nos
Garam Masala - 1 tsp
Chili Powder - 2 tsp
Pepper Powder - 1 tsp
Onions - 2 nos
Ginger Garlic Paste - 1 tsp
Oil - 1 tsp
Salt - to taste

Steps:

  • Hard boil the eggs, peel them and cut eggs into thin long slices. Boil the water in a vessel and add noodles in boiling water. Cook the noodles in this boiling water until they are soft done. Make sure that they should not be overdone and should not be sticky. When the noodles are done, take them out of water. Drain the all the water with the help of sieve. Now, heat the oil in a heavy bottom big frying pan (griddle). When the oil is hot, add the onions and fry until they are light brown. When the onions are light brown, add the ginger garlic paste, chili powder, garam masala, baby peas and pepper powder to it and fry for 1 more minute. Keep stirring frequently. Now, add the sliced eggs to it and mix properly. Now pour the tomato juice to it and cook for a minute. Add salt and mix well. Now, add noodles and mix properly, cook for a minute. keep stirring frequently. Your egg noodles are ready, serve hot with tomato sauce or chili sauce.
