Eggnog, rum flavoring and nutmeg are blended with creamy milk chocolate to create an irresistible truffle.

1/3 cup prepared eggnog
1/4 cup Land O Lakes® Butter
1/2 teaspoon rum flavoring
1/4 teaspoon ground nutmeg
1 (12-ounce) package (2 cups) milk chocolate chips
Powdered sugar
12 ounces vanilla-flavored candy coating (almond bark)
Ground nutmeg, if desired

Steps:

  • Line large baking sheet with waxed paper; set aside.
  • Combine eggnog, butter, rum flavoring and 1/4 teaspoon nutmeg in 2-quart saucepan. Cook over medium-low heat 4-5 minutes or until butter is melted. Add chocolate chips; continue cooking, stirring constantly, 2-3 minutes or until chips are melted and mixture is smooth. Cover; refrigerate at least 2 hours or until firm.
  • Dust hands with powdered sugar. Shape mixture, working quickly, into 1-inch balls. Truffle mixture will be soft. Repeat dusting hands with powdered sugar to make shaping easier, if necessary. Place balls onto prepared baking sheet; refrigerate at least 1 hour until firm.
  • Melt candy coating in deep 1-quart saucepan over low heat; stir 8-10 minutes or until smooth. Remove from heat; cool 10 minutes.
  • Place 1 truffle at a time into candy coating. Coat truffle, using small spoon; immediately remove and place onto waxed paper. Work quickly so truffles do not melt. Sprinkle with nutmeg, if desired. Repeat with remaining truffles. Let cool 30 minutes. Place truffles into paper or foil candy cups.
  • Store refrigerated in container with tight-fitting lid up to 2 weeks.

1 cup semisweet chocolate chips
2 teaspoons shortening
6 tablespoons eggnog
1 package (10 to 12 ounces) white baking chips
1/2 teaspoon rum extract
1/4 to 3/4 teaspoon ground nutmeg

Steps:

  • In a microwave, melt semisweet chips and shortening; stir until smooth. Using a narrow pastry brush, brush the inside of 1-in. foil candy liners with 1/2 teaspoon melted chocolate. Freeze for 45 minutes or until firm. , Using 1/4 teaspoon chocolate mixture for each cup, brush on another layer of chocolate. Freeze until firm., In a small saucepan, bring eggnog to a boil over low heat. Remove from the heat; stir in white baking chips until melted. Stir in extract. Refrigerate for 30 minutes or until filling begins to set., Spoon or pipe 1-1/2 teaspoons filling into each cup. Freeze until firm. Carefully remove and discard foil cups. Cover and store in an airtight container in the refrigerator. Just before serving, sprinkle with nutmeg.

Line a large rimmed baking sheet with parchment paper. Use a small spoon to scoop the truffle mixture into tablespoon-size balls, carefully rolling between your hands. Place on the prepared pan and freeze until very cold and firm, at least 30 minutes. Melt the remaining 12-ounce chocolate in the microwave. Dip the balls in the chocolate, tapping off the excess, and transfer back to the baking sheet. Sprinkle with the nutmeg and cinnamon and refrigerate until ready to serve.
