These roasted eggplant cubes are so healthy and delicious! They are so filling too, I love roasted eggplant! So full of flavor, this is my favorite way of eating eggplant!

Number Of Ingredients 3

1 eggplant
2 tbsp olive oil
Salt (pepper and seasoning to taste)

Steps:

  • Preheat the oven to 425F and line a baking sheet with parchment paper.
  • Cut the eggplant into cubes about 1-inch in size each. You don't need to peel the eggplant!
  • Put the eggplant cubes in a bowl and drizzle with olive oil. Toss the eggplant pieces with your hands so they are coated with oil.
  • Put the eggplant cubes on a baking sheet in a single layer.
  • Put in the oven and bake for 35 minutes, or until the eggplant is browned and soft.
  • Remove roasted eggplant from the oven and sprinkle with salt, pepper and spices to taste.

8 slices bread, cubed
3/4 pound shredded cheddar cheese
1-1/2 pounds bulk pork sausage or Italian sausage
4 large eggs
2-1/2 cups 2% milk
1 tablespoon prepared mustard
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup chicken broth

Steps:

  • Place bread cubes in a greased 13x9-in. baking dish. Sprinkle with cheese; set aside. In a skillet, cook sausage over medium heat until no longer pink; drain. Crumble sausage over the cheese and bread. Beat the eggs, milk, mustard, soup and broth; pour over sausage. Cover and refrigerate overnight or at least 2-3 hours before baking., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or just until set. Let stand for 5 minutes before cutting.

I used 42 oz. of washed unpeeled yellow/gold potatoes, diced/cubed them up as suggested, but I decided to sauté/fry them on medium heat in olive oil until they were slightly softened.
