DEEP SOUTH DISH: EGG BISCUITS



Deep South Dish: Egg Biscuits image

A tender, fluffy and light classic buttermilk biscuit, made with the addition of an egg.

Number Of Ingredients 8

2 cups self-rising flour (White Lily recommended)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 cup (1 stick) cold unsalted butter
1/4 cup vegetable shortening
1 large egg
1 small egg, optional
1/2 to 1 cup buttermilk, plus 1/2 tablespoon for brushing biscuit tops

Steps:

  • Whisk together dry ingredients, cut in butter and shortening.
  • Beat large egg with 1/2 cup buttermilk and stir into flour, adding additional buttermilk as needed to form a soft dough. Cover and refrigerate for 1 hour or up to overnight.
  • When ready to make biscuits, preheat oven to 400 degrees F and generously butter a cast iron griddle, skillet or use a baking sheet.
  • Transfer dough to a floured surface and sprinkle top lightly with additional flour. Gently press into an oblong shape and fold into thirds several times, turning each time, and adding a sprinkle of flour if needed.
  • Gently pat to 1/2 inch thick and cut with a 2-inch biscuit cutter.
  • Place onto prepared pan with biscuits close together or touching. Use your knuckles to make indentation into the top of each biscuit.
  • Beat together a small egg with an additional 1/2 tablespoon buttermilk and brush tops.
  • Bake about 15 to 20 minutes or until golden brown on top.

6 cup(s) all purpose flour
6 - eegs
1/2 cup(s) bottled lemon juice
1 cup(s) oil
1/2 cup(s) milk
1 1/2 cup(s) sugar
3 tablespoon(s) baking powder
1-2 tablespoon(s) grated lemon rind
LEMON GLAZE:
2 cup(s) confectioners' sugar
1 ounce(s) lemon flavoring
4 tablespoon(s) milk

Steps:

  • Measure flour into a large bowl, making a well in the center; Add all ingredients into the well. Mix until smooth. (batter will be sticky; add a little milk until you have the correct consistency and all incorporated).
  • Flour hands and roll into small balls.
  • Place on lightly greased cookie sheet approximately 1/2-inch apart.
  • Bake at 325 degrees for 12-15 minutes.
  • Cool thouroughly on wire racks and frost. You may sprinkle sugared candy on top, if you wish.
