Edamame-Rice Burgers - Hy-Vee Recipes and Ideas image

1 tbsp. of Gustare Vita olive oil
0.5 c. of white onion
3 clove(s) of garlic
1 (12-oz.) pkg. frozen shelled edamame
1 c. of Hy-Vee walnuts
0.5 c. of Hy-Vee long-grain white rice
0.5 c. of lightly packed cilantro
0.25 c. of Hy-Vee plain panko bread crumbs
1 Hy-Vee large egg
1 tsp. of Hy-Vee ground cumin
0.5 tsp. of Hy-Vee salt
0.25 tsp. of Hy-Vee black pepper
0.75 c. of Hy-Vee Select Sriracha mayo sandwich spread
6 Hy-Vee Bakery wheat hamburger buns
0.5 red onion
1.5 c. of spring mix greens
1 mango

Steps:

  • 1.

    Heat olive oil in a medium skillet over medium heat. Add onion and garlic; cook until softened. Remove from heat.

  • 2.

    Combine onion mixture, edamame, walnuts, rice, cilantro, bread crumbs, egg, cumin, salt, and pepper in a food processor. Cover and process until combined. Form mixture into 6 (4-oz.) patties.

  • 3.

    Preheat a gas or charcoal grill with greased grill rack for direct cooking over medium-high heat. Grill burgers 6 to 8 minutes or until internal temperature reaches 165 degrees, turning halfway through. 

  • 4.

    To serve, spread 1 tablespoon sandwich spread on cut sides of buns. Layer burgers, red onion, greens, and mango on bun bottoms. Add top buns.

500 g Edamame
5 Aniseed
1 piece pepper
Right amount Fennel
1 piece chili
1 piece ginger
1 scoop salt
3 slices Bay leaf

Steps:

  • Wash the edamame and remove the stalks at both ends
  • Add aniseed, pepper, fennel, chili, ginger slices, and bay leaves in a pot.
  • Cook out the fragrance
  • Put the edamame in the pot, reduce the heat to a low heat, open the lid and cook for about 10 minutes (according to the amount), skim off the froth and add salt, do not remove it after turning off the heat, and soak for a good taste.
